Gourmet Mushroom Risotto

Reviewed: Aug. 23, 2009
I cut back the mushrooms, as others suggested, and still found it to be satisfactorily mushroom-y and flavorful. Yummy!

Honey Limeade

Very strong, and very tart. I served it with lots of ice to dilute it a bit.

Annemarie's Lemon Bars

Reviewed: Apr. 27, 2008
I doubled this recipe and put it in a 9x13 pan. I also added the zest from the lemons to the curd. While the flavor was very good, the crust came out a bit too thick. I would have liked more of the lemon curd, so I will probably double that part of the recipe next time, and cut back a bit on the crust.

Hot Cross Buns

Reviewed: Apr. 27, 2008
This recipe baked up very nicely. I added chopped candied citrus peel to the dough, in addition to the raisins. I thought the cinnamon was a bit much, and would cut it in half next time.

Simple, tasty, and not as terrible for you as the original. This is the newest addition to my bachelor chow rotation!

Tasty, simple, and fast! You can't ask for much more. I wouldn't change a thing.

Vintage Lemonade

Reviewed: Jan. 26, 2008
I like me lemonade good and strong, so I used some extra lemons when I made my first batch. It ended up actually being too strong. I suspect this recipe will satisfy the lemon lovers like me out there exactly as stated in the recipe. The flavor truly is incredible, like peeling a fresh lemon!

Irresistible Pecan Pie

Reviewed: Jan. 26, 2008
I really like this pie. As another reviewer suggested, a bit of vanilla and cinnamon (just a bit!) adds that little something extra. Also, I bake at a lower temperature to ensure the filling sets up nice and smooth.

Sharon's Jamaican Fruit Cake

Reviewed: Jan. 26, 2008
I've made this recipe two years in a row now, and I am pretty happy with it. Note that I macerate the dried fruit in the wine, and do not add any additional wine when I make the batter. Also, I bake at a much lower temperature (~275). I suggest a drier wine or more acidic fruit. I made mine with dates, raisins, prunes, and a few cranberries, and it really would have benefited from less prunes and more cranberries.

Pizza Dough I

Could use more salt. For those of us that buy yeast by the jar, 1 tsp does the trick.

Banana Banana Bread

Reviewed: Jan. 26, 2008
I was short an egg, but this recipe still came out great! This recipe is true to its name in that it is nothing but bananas. If I made it again I would add some vanilla, allspice, and maybe some ginger.

Chewy Almond Nougat

Reviewed: Jan. 26, 2008
Very tasty, and an excellent base for creating lots of other candies. I added some espresso to the syrup, then dipped cubes in chocolate, and it was very popular. Note that varying the temperature you cook the syrup to can get you anything from gooey soft to hard, and these also soften up a great deal if they are in a warm room. Thanks for the recipe!

Pilgrim Pumpkin Pie

Reviewed: Nov. 21, 2007
I followed the recipe exactly the first time and subbed a half-pint of heavy cream the second, and both times the flavor was good but the texture was loose, watery, and slightly grainy. I baked at a lower temperature the second time, but got the same result.

Spanish Flan

Reviewed: Jun. 17, 2007
This was my first attempt at flan. I followed the advice of other reviewers and pre-heated the pan prior to pouring the caramel. Unfortunately, I forgot to either shorten the cooking time or let the pan cool completely before adding the custard, because after 60 minutes I had an omlette. It was a very tastey omlette at least, I just need to dial in my cooking time.
