Cheesy Corn Casserole
I didn't really care for this recipe much. I followed the recipe exactly except I used 14 oz cans of corn, and the whole thing turned out kind of bland. Maybe a little salt would have helped... not sure if it would have made enough of a difference for us to love it though. Sorry, I won't be making this one again.

French Breakfast Muffins
These were very good, very easy muffins to make. I followed the recipe exactly except I added some cinnamon and a little bit more sugar to the dry mix. I was only able to get 10 muffins out of it, but they came out perfect. Some people said they didn't think they would taste as good once they had cooled, but we ate them for breakfast the next morning and they still tasted yummy to me! It's always fun to find a quick easy recipe made with stuff I already have in my pantry.

Slow Cooker Chicken Taco Soup
This was a really good, easy soup. I used 1 can of chicken broth in place of the beer and also used mild Rotel instead of the original. I didn't have all the ingredients on hand to make Bill Echol's taco seasoning, so I just used a packet of McCormick's taco seasoning, and it was great! Can't wait to go home and eat leftovers tonight!
