Chicken Fried Chicken

I LOVE this recipe! I only made ONE mistake but it was MY mistake & didn't have to do with the recipe itself. In the picture I uploaded, you can tell I over-cooked the chicken. I made the mistake of not COVERING the chicken so it took longer for it to cook on the inside but as you can see, the "breading" & color of it is a great, golden brown & the taste it wonderful. I deff. will use this again & again! TY!

Mexican Ceviche

I've made this ceviche a couple of times & got many compliments. I made the original & it was good. But the next times, I ommited the radishes & added 2 limes & 1 avacado. We love avacado! lol. I also didn't use jumbo shrimp to make it more tortilla friendly. The way we eat ceviche is, I toast whole tortillas in some oil & then, after they've cooled, spread some mayo in the tortilla, top it with ceviche & munch away. It's great! :)

Biscochitos Traditional Cookies

Well, first off: Never send a man to do a womans job. :p My husband bought All Vegetable Shortnening instead of lard. Still, they came out DELICIOUS! I was told they come out better w/ lard, so i'll use that next time. Also, I used brandy, not pineapple juice like another suggested, but I did use PJ to moisten up the dough when needed. THANK YOU!

Tres Leches (Milk Cake)

This recipe got GREAT reviews, which is why I chose it. I made this EXACTLY as was put. The actual cake came out great. It was thin but if it were thicker, it would take much longer for the milks to soak & keep in mind that the milks will make it thicker. Everything came out great until I made the topping. 1 cup of sugar was too much. Perhaps I didn't mix well but it was a lot of sugar. I added it & when I tasted it, I had to dump it. Also, it took forever for the milks to soak in. HOURS! & I STILL had to dump some ounces out. I recomment making this recipe a day before because you'll grow inpatiant waiting for it all to soak. & kept poking holes but nothing seemed to work. I'd appreciate some tips on making it soak in faster. Because it all came out great until the topping. Next time, I will add half cup sugar & if it needs more, I will add more. I will try again soon because it really is a great recipe.

Frijoles a la Charra

I, personally, don't RATE unless I follow the exact recipe but I based my frijoles on this recipe, so i'll give it a 3 until I follow it to the T. I didn't add the beer since I didn't have any. But I added everything else & it was my best frijoles a la charra yet. I didn't need to soak & the time it took to cook through was right on. They were great. Thanks for a great recipe! My husband liked them, but didn't love them. I'm not worried though, he only gives 5 star rates to his mommy. :)
