Best Butternut Squash Soup Ever

I roasted the squash with garlic and broth before making the soup. It adds a richness the boiling can't touch. Other than that I made as directed. Five moms asked for the recipe. Great and easy soup!

Chef John's Pasta Primavera

We have been snow and cold bound in the Northeast this winter. Yesterday was the first warm day of the winter. We spend the entire day outside and then came home and made this AMAZING pasta dinner. This recipe is perfect as written. Not even one change is needed. Be sure to use fresh vegetables and really GOOD cheese. I used a combo of Parm and Asiago which I grated by hand. I will be making this again and again in the warmer months.

Chicken and Lentils

I've made this recipe about 4 times now. The first 2 times I made it as stated. Delicious! I then left out the tomato Sauce at the end. We liked it better. I made it last night for dinner using french lentils, no tom sauce and spiced pumpkin seeds as garnish. We served it over brown rice and everyone was in heaven. I would give this recipe 10 stars if possible. Don't be afraid to play with it. Oh also I always cook it in my crockpot 6 hrs on low 4 on high.

Easy Batter Fruit Cobbler

After having made this 2 times exactly as the recipe indicates, last night I made it again but added a 1/2 teas. cinnamon and a teas. of orange extract. I also put the berries in the butter before pouring the batter over them. Oh My! This improved the flavor so much! And that's saying a lot considering the recipe is great to being with. Yum and so easy.

Chef John's Lemon Bars

I've made this recipe as is many many times. That is what the 5 stars are for. However, now I add 2 teaspoons of freshly grated lemon zest to the crust before I finish blending it. I also increase the curd recipe by 1/2. Now the lemon curd sits about 3/4 of an inch above the crust. It's wonderful.

Healthier Creamy Au Gratin Potatoes

I almost never make major changes to a recipe before I make it "as is" first. So after making this exactly as written once (and it was very good!), these are the changes that I made to make it even more healthy. I used yukon gold potatoes (leaving peel on) because I found the russte to be a bit mealy. I used 1 Tbls butter, 1 1/2 Tbls organic EVOO (a healthier fat). I also used fat free 1/2 and 1/2 in place of the milk, this made it extra creamy. Just before I added the cheese to the sauce, I put in a minced clove of garlic and a couple dashes of hot sauce. The changes were made because of my families personal tastes but this is the way we make them all the time now.

Chocolate Cappuccino Cheesecake

DOUBLE THE CRUST- I've made this cake 3 times. Once as written & twice with my low-cal version. Great reviews each time. I used a Splenda blend for all of the sugar to cut the sugar cals in 1/2. I used 2 pkgs Neufchatel cream cheese and 1 fat free pkg. I used fat free 1/2&1/2 inplace of the heavy cream in melting the choc. I used reduced fat sourcream. For the cup of heavy cream I used 2/3 cup heavy cream with 1/3 cup fat free 1/2&1/2. Then I baked it for 50 min. in a water bath before shutting down the oven. This seriously reduced the calorie content without sacrificing taste. It's also true if you let it chill over night before serving.

French Spring Soup

I made this soup last night for dinner with a salad and rolls. I'v made it for years, but I use chicken stock inplace of the water. I also add garlic and fresh parsley. I have never used heavy cream, I use a mixture of 1/2 & 1/2 and milk. Last night I used kale in place of the spinach, it's all I had on hand.

Bacon and Date Appetizer

This recipe has been an old stand by for years. It's quick and I almost always have the ingr. on hand. Howeve I made one switch years ago that has saved a lot of time. Instead of using the whole almond I use almond butter(and sometimes peanut butter) in the middle of the date. It makes it so much easier to get the toothpick in. I bake instead of broil to have the even cooking of the bacon. Yum. My sister also brushes hers with real maple syrup before putting in the oven. I don't thought, to sweet.

Fluffy Haddock and Potato Pie

This is so much like the Fish Pie my granddad used to make. The only change I made was to add a bit of garlic powder to the fish and milk. I served with crusty bread and a big green salad. YUM!

Grilled Onions and Potatoes

This recipe is delicious as written. The only change I made, I use smoked paprika for that added "grilled" flavor. After I flip them on the grill, I poke holes in the foil to let out the steam so they don't get mushy but stay crisp.

Cinnamon Rice with Apples

I've made this a few times as is and we liked it. I always use brown rice and put the apples in a bit later so they don't cook all the way down. The other morning I made it for breakfast. I left out the parsley, used cider instead of the apple juice, added a touch of ginger and 2 T. brown sugar and before serving I drizzled each bowl with a bit of maple syrup, a sprinkle more cinnamon and a handful of chopped uncooked apples, pecans and raisins for crunch. It was a huge hit! I put another pot on to cook already because they will be up soon asking me to make it again. Great hot breakfast change!

Macaroni and Cheese V

We had a bunch of people over for Sunday dinner today. I made this Mac & Cheese and it was a huge hit. The only change I made was gluten free penne and bread crumbs was substituted for the regular macaroni and bread crumbs.

Creamed Chipped Beef On Toast

I just made this for New Year's Day brunch. I tripled the recipe and added 1/2 teaspoon garlic powder and 1/2 teaspoon dried mustard. That is how my mom used to make it when I was a kid. It was one of the first entries to go! Simple and yummy. I wish I could find dried beef without nitrates.

Chocolate Banana Bread

My daughters soccer team scarfed this down in record time! The next day four mom's and 1 dad called me for the recipe! I always make the recipe as is if I am rating it. Having said that we are Celiac at our house so I have to exchange gluten free flour for every flour recipe. Not one of the girls noticed any difference. This is delicious!

I made these yesterday for a large gathering. They were the first things gone. I also added cinnamon & nutmeg to the batter and topped with a simple glaze of powdered sugar, cinnamon, milk and a splash of maple syrup. Oh I left out the pinenuts simply because I didn't have any on hand.
