Pesto with Arugula

I made this recipe twice, the first time as is and then without the olives. The rating is for as is. We much prefer it without the olives.

Simple Scones

After making as is, (they were delicious but time consuming), I've altered the recipe to make it more user friendly. I simply cut the cold butter into little pieces and cut it into the dough. I also melted it once and mixed it in with no adverse effects to the recipe. So the grated butter step can go. I also now use Greek lemon or vanilla yogurt in place of the sour cream. We make these a couple times a month. They never last passed them morning we gobble them up!

Leftover Ham -n- Potato Casserole

We liked this as written. Four stars. We liked it more after whisking in a pinch of cayenne and a dollop of Dijon to the sauce before pouring over ham & potatoes. I also omitted the first 3 tablespoons of butter and used 1 Tablespoon of olive oil.

Lemon-Parsley Green Beans

I'm giving this recipe, as written, only 3 stars because of the amount of fat. I made the this as written and we all thought it was to greasy. After making it again with only 1 Tbls butter OR olive oil it was perfect. The parsley and lemon is wonderful.

"Pantry Raid" Chicken Enchilada Casserole

Spaghetti Aglio e Olio

We inhale this whenever one of us makes Spaghetti Aglio e Olio. We seem to like this recipe the best. My thirteen yr old asked me to show her how to make it so she could whip it up on her own. It's classic and will me a delicious fallback recipe for, well, ever.

Chef John's Dutch Babies

To posipat, it says at the top of the recipe to preheat oven to 425. I've been making this for years. It is wonderful with savory toppings as well. When done, bush with butter then sprinkle with garlic powder and freshly grated parmesan and serve along side a soup or stew. Wonderful!

Crustless Cranberry Pie

Five stars for simplicity and 10 for deliciousness! I made this last Christmas morning, with hot coffee, to nosh on while opening gifts. It was requested again this year! The only changes I made (because of nut allergies), I replaced the walnuts with toasted sunflower seeds, for a bit of crunch, and I used orange extract instead of the almond. When it came hot from the oven I drizzled it with orange glaze. Wonderful recipe!

Gluten-Free Upside-Down Pizza

This is a family favorite! We are Celiac and my 13 yr old has made this so many times she no longer needs the recipe. It's so versatile that you could make it twice in the same week and it could be completely different. Lisa B's is the tried and true but we always top with pepperoni, black olives, and chopped green onions. Yum!
