Beef Stew VI

Reviewed: Oct. 23, 2014
As is the recipe is good. I usually make a slow cooker beef stew with stout and lots of root veggies. I prep it the night before and just pop it into the slow cooker in the morning. Well I forgot and I'd already promised my family beef stew so I tried this one. The really liked it but said it needed a few things like garlic, a little thyme and of course, the stout. Because we have a corn allergy and we are also Celiac, I thicken stews with instant potato flakes. Just a 1/2 cup was perfect for the thickness we were looking for. Try it.

We are a GF household and have made many GF pizza crusts from scratch. This is delicious and versatile. We do not make any changes.

Slow Cooker Chicken Pot Pie Stew

This was salty! I did not make it, I had it at a dinner party this weekend. The host showed us this recipe and said he followed it to a T. None of the guest finished it.

Red Bean and Sweet Potato Enchilada's

Reviewed: Sep. 19, 2014
I made this for the millions time last night for my daughters soccer party. Everyone loved it. Even the picky teenagers. I made three pans. The first pan I made as is for the vegetarians, I added ground turkey to another pan and shredded pork to the third. They were all gone with an hour of dinner starting. The recipe doubles and triples nicely. It also freezes well.

Refrigerator Dill Pickles

Reviewed: Sep. 13, 2014
I've made these for two summers now and they are a hit every time. We now only add 1 teaspoon of sugar and 5 or 6 whole peppercorns. I have to make them and hide them in the frig or my family will eat them even before the 3 days are up! Oh I forgot, we also add 1 small onion sliced into rings sometimes too. Yum.

Collard Greens and Beans

I only gave this 4 stars because when I made it as is, we didn't like prefer it as much with the brown sugar. I now make it without.

Zucchini Bread

Very yummy recipe. I halved the sugar. The original recipe was a bit to sweet. We also add chocolate chips or raisins when desired. Great recipe!

Zucchini Pancakes

Reviewed: Sep. 13, 2014
My family has been making these zucchini pancakes for years. It is a great basic recipe. We prefer them with minced fresh jalapeno and one or two diced chicken chorizo sausage. Serve fresh salsa and a crisp green salad and you have a quick and delicious dinner.

Authentic Mexican Breakfast Tacos

Reviewed: Sep. 13, 2014
I was giving this exact recipe (with the pepper & onion from video) years ago from my south Texas sister-in-law. It's a great spicy hot breakfast guaranteed to warm up any tummy on a cold northern winter morning. I sometimes add a dollop of plain Greek yogurt to even out the heat.

Utica Greens and Beans

This recipe is delicious! I've made it as is a couple of times with huge compliments. Last night we made it with just harvested collard greens. Really you NEED to make this! Don't change a thing the first time.

Chicken and Summer Squash

Reviewed: Aug. 3, 2014
It was good as written (used olive oil, not veg oil). The second time I made it I used olive oil, added fresh basil, 2 cloves garlic, 1 med onion sliced into rings and sliced baby portabellas mushrooms... Fantastic! Served with grilled potatoes, arugula salad and a great bottle of Chardonnay.

Grilled Onions and Potatoes

Reviewed: Jul. 30, 2014
This recipe is delicious as written. The only change I made, I use smoked paprika for that added "grilled" flavor. After I flip them on the grill, I poke holes in the foil to let out the steam so they don't get mushy but stay crisp.

Tomato Zucchini Casserole

Reviewed: Jul. 30, 2014
After making this recipe as written (that is the 4 star rating) I now use the changes that Lala posted. She doesn't state how much fresh herbs she uses. I use about 8-10 fresh basil leaves, chiffonade and about 1 teaspoon of minced fresh oregano. I also use buffalo mozzarella. Because of family allergies, I also used fresh gluten free bread crumbs. IN ADDITION: I made this again last night but used smoked sea salt directly on the tomatoes and smoked paprika in the bread crumbs. It was delicious!

Creamsicle® Cheesecake

I used the low fat cream cheese, I left out the food coloring, bad for you (that is why I only gave this 4 stars), and added a tablespoon of grated orange zest.

Roasted Cauliflower Soup

Reviewed: Jul. 19, 2014
I never review a recipe without making it the original way at least once. So the original recipe only got 4 stars. But then I added a few sliced of bacon (sliced into 1/2 in pieces then fried with onions)2 carrots and chicken stock in place of the water. This improved the flavor immensely.

Oma's Rhubarb Cake

Reviewed: May 25, 2014
This recipe, as written, is wonderful. I've made it many times. I also like to change the white sugar out for brown sugar. I also like to add 1/4 cup oatmeal to the strudel topping for a bit of texture. Alea your Oma must have been a wonderful grandmother if she could make something this yummy!

Strawberry Rhubarb Sauce

Reviewed: May 25, 2014
This is fantastic! I'm only giving it 4 stars however because of the added food coloring. It's very bad for you and we've never put in this recipe. It doesn't need it. After 2 or 3 times of making it, we made changes. We add 2 cups of rhubarb and we now leave out the vanilla. I have added a splash of fresh lemon juice, that helps to keep the strawberries red. My sister makes this too and she serves it with her pork roast. Yum!
