Broccoli with Garlic Butter and Cashews

Exciting new way to eat my favorite veggie! Made it as written, with the exception of reducing butter to 3T rather than 5, and I really can't imagine it with more butter. Will probably add a little cornstarch next time I made it based on others' reviews.

Ginger Veggie Stir-Fry

Pretty good. The cornstarch really helped to thicken up the sauce at the end. I think I undercooked my veggies a little bit, so I will probably extend the cooking time at the end.

Pizza Dip

This was great! I needed a dip recipe in a pinch, and this was super easy to put together. Our guests don't eat pork, so I used turkey sausage instead, and it tasted just fine. We also skipped the olives, but I think it would be yummy with them as well. I did add garlic powder and Italian seasoning to the cream cheese as others suggested, and I think it helped give the dip a little more flavor. Will definitely make again!

Chicken Florentine Casserole

Super delicious! I modified the recipe to make it a little healthier and to suit our tastes by using Healthy Choice cream of chicken, fat free half and half, frozen spinach (thawed and drained), broccoli rather than mushrooms, about 1/3 c. bacon bits and 1 c. part-skim mozzarella. I also cut up the chicken and sauteed it in 1 tbsp olive oil rather than baking it off. Will definitely make again!

Butternut Squash Risotto

Delicious! Only thing I changed is that I used about 3 cups of chicken stock rather than 5. I was a little concerned when I first added the squash and stock that it would end up a soupy mess because I forgot to measure the squash (just cut up one small squash and mashed it), but it turned out perfectly! I think this would be a wonderful, unexpected side dish for Thanksgiving, but we will certainly use it as a main dish throughout the year.

Risotto with Tomato, Corn and Basil

I usually subscribe to the "don't post about all of the changes you made to the recipe", but I wanted to share the alterations I made (some not planned) that resulted in a super tasty dish. I used chicken stock instead of water, which I think gave it a pretty robust flavor considering I used skim milk. Also, I killed the tomatoes while I was trying to chop them, so the next logical step would be to replace the tomatoes with bacon, right? Boy was it good! Knowing that this recipe should have been made during the summer rather than the end of September, I couldn't find fresh corn in the grocery store, so I used frozen corn, and it seemed to be a good substitute. I think I may try using sun-dried tomatoes in place of the fresh tomatoes in the winter, particularly since I wasn't successful in peeling/seeding/chopping the first time around. Would make this again in a heart beat!

Tomato Spinach and Basil Soup

So yummy! My husband made this for dinner tonight, and it really hit the spot. He used skim milk to lighten up the recipe, and it still tasted rich and luxurious. Will definitely make again soon!

Mama's Asian Chicken and Rice

Very yummy! I would definitely recommend doubling the sauce, though I did not double the red pepper flakes and it was plenty spicy for me. I also added sugar snap peas, and I would consider adding another vegetable as well - probably broccoli since that is my favorite.

Mexican Turkey Burgers

Delicious, filling, and healthy! Followed the directions to a T, and turned out perfectly. Made the following "healthier" modifications: turkey breast (99% fat free), low sodium taco seasoning and corn, whole grain bread crumbs, and whole wheat tortillas. We did not use sour cream, but I think I will probably use some FF sour cream next time.

Deep Dish Potato and Pumpkin Pie

Not sure if I did something wrong, but no one in my family thought it was a "make again" dish. I did make it without the crust, but based on the other reviews, I don't think that could have been the problem. Feels like it needs something...maybe a splash of cream or more spices?

Stuffed Peppers with Turkey and Vegetables

Really tasty! I had never had a stuffed pepper, and I could have lived without the pepper part; it was just ok. The filling was very good, so I look forward to making it in lots of other ways - as a pasta sauce, over rice, in a wrap, etc.

Orange Rosemary Chicken

Pretty tasty! I used 2 chicken breasts but did not reduce the ingredients for the marinade so that I could have some "safe" marinade that had not touched the fish. I thickened the extra marinade with cornstarch to make it more of a sauce consistency. I might use OJ concentrate in the future to get a bigger orange flavor.

Easy Baked Tilapia

I was concerned that this dish wouldn't have any flavor given how easy it was, but the fish and the veggies were super delicious! Definite bonus that it's healthy for you too. Will add it to the regular fish rotation.
