Heavenly Halibut

Reviewed: May 11, 2014
Delicious! Seasoned the fish with salt, pepper, and a splash of lemon juice and baked for 8 minutes at 475 since we had another dish going in the oven at the same temperature. Then put the topping on, sprinkled with some whole wheat bread crumbs, and put back into the oven for 3 minutes. Perfection! Our halibut portions had the skin on, and the fish came right off of the skin once it had been baked.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Apr. 16, 2014
Excellent! Wouldn't change a thing, other than maybe decreasing the butter slightly just to make it a little healthier.

Whole Wheat Sweet Potato Muffins

Reviewed: Mar. 23, 2014
Very good! The topping mix made way too much, so I cut the amounts in half the next time around, and that was perfect.

Hummus Pizza

Reviewed: Feb. 11, 2014
Very yummy! I used roasted garlic hummus, and since I happened to have some turkey pepperoni around, I added that as well. Nice change of pace, and a good way to get veggies into kids.

Slow Cooker White Chili with Chicken

Reviewed: Feb. 6, 2014
Pretty good, though it needs some type of acid. We didn't put the tomatoes on top, so that might have helped. Also think it might be nice to add some frozen corn. We added a splash of heavy cream since we had it on hand, and topped with cilantro and cheese.

Rainbow Veggie Chili

Reviewed: Feb. 3, 2014
Really yummy! Only thing I would do is increase the chili powder, but that's just my personal preference. My 16-month old gobbled this up too!

Pesto Turkey Burgers

These were excellent! I think this would make a great recipe for meatballs over spaghetti as well.

Quick Chicken And Wine

Reviewed: Dec. 4, 2013
Very yummy recipe. We halved the recipe, and the chicken filled a decent size skillet, so I would think that you would need a really large skillet in order to accommodate 4 chicken breasts. Really wouldn't change a think about the recipe. Just served with some veggies, but will serve over pasta next time around.

Ham and Butternut Squash Spaghetti

Reviewed: Oct. 17, 2013
SOOOOO good. Really loved the slight amount of heat from the red pepper flakes. Would probably try it with pancetta next time rather than the smoked ham.

Emerald Green Risotto

Reviewed: Jun. 7, 2012
Thought this was just ok. I didn't have white wine in the house since I'm pregnant, so after doing some searching online, I used some ginger ale as a substitute. Also, I omitted the green beans because the ones at the store didn't look so good. Otherwise, I made the recipe as written. Ultimately, I think it needs some more acid - maybe some lemon juice or maybe some halved or quartered cherry tomatoes (which ruins the "emerald green" effect, I suppose). Might also be tastier with parmesan cheese.

Broccoli with Garlic Butter and Cashews

Reviewed: Apr. 29, 2012
Exciting new way to eat my favorite veggie! Made it as written, with the exception of reducing butter to 3T rather than 5, and I really can't imagine it with more butter. Will probably add a little cornstarch next time I made it based on others' reviews.

Ginger Veggie Stir-Fry

Reviewed: Apr. 22, 2012
Pretty good. The cornstarch really helped to thicken up the sauce at the end. I think I undercooked my veggies a little bit, so I will probably extend the cooking time at the end.

Pizza Dip

Reviewed: Apr. 22, 2012
This was great! I needed a dip recipe in a pinch, and this was super easy to put together. Our guests don't eat pork, so I used turkey sausage instead, and it tasted just fine. We also skipped the olives, but I think it would be yummy with them as well. I did add garlic powder and Italian seasoning to the cream cheese as others suggested, and I think it helped give the dip a little more flavor. Will definitely make again!

Zucchini Herb Casserole

Pretty tasty! I added some red pepper flakes for a little kick. Also, I only used about 1 cup total of 2% cheese to make it a little healtheri.

Chicken Florentine Casserole

Reviewed: Mar. 8, 2011
Super delicious! I modified the recipe to make it a little healthier and to suit our tastes by using Healthy Choice cream of chicken, fat free half and half, frozen spinach (thawed and drained), broccoli rather than mushrooms, about 1/3 c. bacon bits and 1 c. part-skim mozzarella. I also cut up the chicken and sauteed it in 1 tbsp olive oil rather than baking it off. Will definitely make again!

Butternut Squash Risotto

Reviewed: Dec. 5, 2010
Delicious! Only thing I changed is that I used about 3 cups of chicken stock rather than 5. I was a little concerned when I first added the squash and stock that it would end up a soupy mess because I forgot to measure the squash (just cut up one small squash and mashed it), but it turned out perfectly! I think this would be a wonderful, unexpected side dish for Thanksgiving, but we will certainly use it as a main dish throughout the year.

Risotto with Tomato, Corn and Basil

Reviewed: Sep. 30, 2010
I usually subscribe to the "don't post about all of the changes you made to the recipe", but I wanted to share the alterations I made (some not planned) that resulted in a super tasty dish. I used chicken stock instead of water, which I think gave it a pretty robust flavor considering I used skim milk. Also, I killed the tomatoes while I was trying to chop them, so the next logical step would be to replace the tomatoes with bacon, right? Boy was it good! Knowing that this recipe should have been made during the summer rather than the end of September, I couldn't find fresh corn in the grocery store, so I used frozen corn, and it seemed to be a good substitute. I think I may try using sun-dried tomatoes in place of the fresh tomatoes in the winter, particularly since I wasn't successful in peeling/seeding/chopping the first time around. Would make this again in a heart beat!

Tomato Spinach and Basil Soup

So yummy! My husband made this for dinner tonight, and it really hit the spot. He used skim milk to lighten up the recipe, and it still tasted rich and luxurious. Will definitely make again soon!

Homemade Black Bean Veggie Burgers

I followed the directions to a T, and unfortunately, I just didn't think these were particularly good. I love veggie burgers and black beans, so I'm not sure where I went wrong. Disappointed :(
