Stuffed Pepper Soup IV

I just made this soup but I changed some of the ingred. and made it a 5 star according to my husband. Used 1 lb. free-range ground chicken plus 1/2 lb. ground round. Also added celery and garlic with the onions and peppers. I used 3 orange and yellow peppers instead of green. I also used 1/2 carton organic beef broth and 3/4 carton organic chicken broth and 2 cans of diced tomatoes coarsely pureed. I added organic brown uncooked rice after the above came to a boil and simmered it for 45 minutes or so. Then I added several spices. My family raved about it and said I could make it anytime! I probably just about doubled the recipe as stated.

Fresh Tomato Salsa

I also use jalapeno peppers with my salsa. This is a great basic recipe. Very easy to make. PLEASE remember to wear plastic gloves when cutting hot peppers...and do not touch your face! I failed to wear the gloves and after chopping 10 peppers for a larger recipe, my hand is on fire!

Pumpkin Pie Cake II

I was looking for a good recipe using pumpkin and this is what I found. My husband and son loved it. We took some right out of the oven over to the neighbors house. They also loved it. The middle has the consistancy of pumpkin pie, and the crust is like a slightly crunchy cake. I added some chopped walnuts to the top. I may add nuts to the crust too next time for added crunch. I also added some nutmeg and ginger to the filling. I used butter instead of margarine. I cut back on both sugars and it was still plenty sweet enough. We had it with vanilla ice took some of the sting out of losing to the Yankee's last night...
