Butternut Squash Soup II

So tasty, so easy. I baked the squash, whole in the oven at 375 for 1 hour. Cut some slits with a sharp knife to let it vent. Added a pinch of nutmeg, a pinch of cayenne and 2 tsp. of Nature's Seasoning. I couldn't stop eating it!

Rainbow Veggie Chili

Filling and healthy! A couple changes: Chili isn't chili w/o Cumin-I added 1 Tbsp. I used a smaller can of corn and there was plenty. It was a bit too thick so I added about a cup of chicken stock. So good!

Easy Chicken Enchiladas

Easy is right! I use a rotisserie chicken from the grocery store, which gives you around 3 cups of chicken. I also use black beans instead of pinto. With the extra chicken I use all 8 oz. of cream cheese and 1 whole bottle of Herdez hot salsa. Add a couple teaspoons of taco seasoning. This will fill 8 large tortillas. Top with shredded pepperjack and you're good to go! My husband said it's his new favorite meal of all time.

Crustless Spinach Quiche

Incredible and easy! I used olive oil instead of veg oil, fresh spinach from the farmers market and mozzarella cheese (around 2.5 cups, which was plenty.) I also added a tiny pinch of nutmeg per suggestions. I used a glass pie pan and lightly greased it with a little butter. SO tasty! I am definitely adding this one to the vault!

Chicken Pot Pie IX

This was incredible and super simple! I have never made a pot pie of any kind before. I left out the celery seed as I did not have any, but added in poultry seasoning (probably around 1/2 to 1 teaspoon.) It was voted best meal ever by my husband. I think I had enough to make two entire pot pies if I wanted to.

Creamy Pumpkin Soup

This was delicious and super easy! I left out the sour cream/parsley/bacon garnish and it was very tasty on its own. I also used my immersion blender to smooth it out, but left some potato chunks in for texture. We marveled that it tasted like something a fancy restaurant would serve. Will definitely make this again!
