Scrumptious Chicken Vegetable Stew

Spicy African Yam Soup

YUM! I was a little skeptical, as I often don't like peanut sauces, however the review were so positive that I gave this recipe a try. I am so glad that I did, and my husband and I both agree that this recipe is going to a staple be in our weekly soup rotation. My husband actually said that this may be his favorite soup I have ever made! I followed the directions, except I cut my veggies in large chunks, and I didn't need to simmer as long as stated for my potatoes and zucchini to be fully cooked--probably 20 minutes total of simmering. Thanks for a healthy, delicious recipe!

Graham Cracker Crust I

A simple delicious crust! I used 1 1/2 sleeves of mi-del brand honey Grahams (all natural, whole wheat), and left out the cinnamon, as I wasn't sure how that would go with the key lime pie I was making. Ground up the crackers I'm my blender, and mixed it up right in the pan. Baked for the 7 minutes, and for another 10 minutes with filling after it cooled. It wasn't overdone, and tasted great! Thanks for a great, easy recipe. Can't believe I ever bought a graham cracker crust now that I know how simple they aren't to make.

Tofu Creamed Spinach

Amazing! Tasty and simple. A great way to use up leftover tofu. I tend to make a quarter of the recipe, which makes just enough for two adults. I took other's suggestions and cook the spinach longer, adding just a touch of sugar and lemon juice. I also add the pinch of nutmeg with the tofu/cheese mixture, and I just blend it together with my hands. I'd like to try it with silken tofu--might be easier to get the creamy texture, rather than lumpy.

Hungarian Mushroom Soup

A wonderful complex flavor! I won a mushroom-themed cookoff at work with this recipe, thanks HAMM! Make sure you are using a pretty large pot, because the 1 lb of mushrooms makes over 8 cups when sliced. As many others, I used a combination of white, crimini, porcini and oyster mushrooms. I left the parsley and sour cream (subbed greek yogurt) on the side for people to garnish their own.

Tzatziki Sauce (Yogurt and Cucumber Dip)

YUM! I found this recipe last minute, so didn't drain the yogurt, nor let it sit for the entire two hours. Still super tasty though! True, it was even better the next day, so I'll try to plan ahead next time.

Lebanese-Style Red Lentil Soup

So tasty! I didn't have cilantro, so used about 1 tsp of coriander, and only added a couple tablespoons of lemon juice, as my husband doesn't like lemon flavored things. This is a really easy and delicious recipe. For those who have made this with green lentils, really try to find red ones... they cook quickly and become so creamy. Definitely a recipe to make again and again.

No Roll Pie Crust I

Easy and tasty! Honestly, crusts are not my favorite part of a pie, but this was fast, easy and does not include crisco. I used this for a Dutch apple pie and it was perfect. After reading some of the reviews, I used only 1/4 tsp salt, and I used the smart balance vegetable oil that I had on hand. I prebaked it for 5 minutes before adding the pie filling. I will never even consider using crisco in a crust now! Thanks for the recipe!

Dutch Apple Pie with Oatmeal Streusel

WOW! Delicious and easy! I followed this recipe closely, except put in 1 heaping tablespoon of cinnamon. I used the "No roll pie crust I" recipe from this site, and did bake it for 5 minutes before filling, as others have suggested. My husband says it is the best apple pie he's ever had, and my mother-in-law asked for the recipe. Two great compliments from people who have tasted lots of apple pies :) This will be my apple pie recipe from now on.

Braised Flank Steak with Lemon and Garlic

Quinoa and Black Beans

This was great! I used black beans that I cooked in the pressure cooker with onion, a bay leaf, cumin and a little salt. I didn't have cilantro, but added a couple handfuls of fresh spinach. I did rinse my quinoa before cooking, and browned it for a couple minutes with the spices prior to adding the veggie broth. It turned out great, and my husband loved it too!

Boiled Chicken

You can't go wrong with this recipe. This is the first recipe I used from this site, and it is so versatile! I usually make it for enchiladas, but it also makes amazing soup, or chicken for any other recipe! It is funny that you'd need a recipe for something that seems as basic as boiled chicken, but three years ago I had no idea how to make shredded chicken. Now I make it all the time!! Thanks!

Squash Pie

Yum! Used a combo of kabocha and acorn squash, and used half brown sugar and half white, as other reviews recommend. Very tasty, and beautiful! There was definitely extra filling. I made several mini squash tarts with the extra by placing a small maple cookie in the bottom of lined mini muffin tins. Foil liners would have worked better than paper because they are a little messy, but they are tasty little treats! Thanks for the great recipe!

Chocolate Crinkles II

amazing cookies! I made these yesterday for a party, and was asked for the recipe. I followed the recipe exactly, except I didn't have time to let them chill for 4 hours. Instead I placed half the dough into the freezer for 45 mins-1 hour, and made those for the party. The other half went into the fridge and I baked them today--no difference in the two, both are delicious and look beautiful! I ended up with about 4 dozen total.

Tasty Buckwheat Pancakes

My husband and I both loved these pancakes! They turned out with great texture and flavor. I used spelt flour instead of the all-purpose, and only used 1 T. of oil. We've been looking for a good multigrain pancake recipe and this one is it!

Ultimate High Altitude Chocolate Chip Cookies

YUM! For two years I've been trying to make good chocolate chip cookies in Colorado Springs. They are always flavorless. This recipe is perfect!!! I did use half wheat and half white flour. Good thing I only made a half-batch, because I cannot stop eating them!

Butternut Squash Soup II

YUM! Like others, I used one sweet potato instead two regular. I had leftover baked squash in the freezer, so the whole recipe only took me about 25 minutes from start to finish. I didn't add any spices, and I thought it had amazing flavor! It definitely did not require milk or sour cream, but this could be partially due to the sweet potato substitution. For a fast, low-cost, super-healthy meal, this recipe is great!
