I made this for dinner tonight and it was great! Quick and super easy to make. I'll definitely make this again!

Baked Beef Stew

Reviewed: Jun. 4, 2007
This was great! I brown the meat with red wine. I also took the advice of a reviewer and made a broth with 4 bullion cubes and a cup of water and added some cold water whisked with cornstarch. It made a really yummy gravy and gave some good flavor. Otherwise, I follow the recipe exactly. My husband asks for it at least once a month.

Artichoke & Spinach Dip Restaurant Style

Reviewed: Jun. 4, 2007
We really enjoyed this. It tasted better than restaurant dip. I put my spinach, roasted garlic, and artichokes in the food processor because I don't like the chunks. It gives it a great texture. I mix everything in my stand mixer to eliminate cream cheesy clumps. I also followed the advice of some other reviewers and used all of the cream cheese and Alfredo sauce. I use Garlic Alfredo to give it a little extra flavor. (Since my original review, I've gotten lazy. I don't roast the garlic anymore and notice no difference.) I make this pretty often. I have taken it to several parties and gotten tons of compliments on it. It usually doesn't last more than 10 minutes! I had to update: I have had at least 6 people ask for this recipe. It's such a huge hit! People request this ALL the time. I've taken to doubling the recipe because I know one batch just isn't enough!

This was pretty good. I followed the recipe exactly and my only complaint is that it was a little dry.

These were fantastic! I love blue cheese and I thought they were even better than restaurant burgers. Will definitely make these again.

Restaurant-Style Potato Salad

Reviewed: Jun. 19, 2007
I just made this and it's fantastic! I had a few bites before I even put it to chill and I didn't want to stop snacking! Yum! Addition: I've now made this several times for various events. People rave about it!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Sep. 22, 2007
Outstanding! These are our go-to dessert. Everyone loves them. I've found that extra brown sugar and vanilla really make them extra tasty. I cut out the walnuts and use 1 cup of chocolate chips. 1/2 cup isn't enough.

Tres Leches III

Reviewed: Jan. 1, 2008
Whoever said you have to use a stand mixer was right. I used mine to make the batter, transfered it to a different bowl, then used the mixer to make the egg whites peak. I followed the directions exactly. This cake is so delicious! If I ordered it for dessert at a restaurant I would not be disappointed. Thanks!

Hearty Jambalaya

This was pretty good but the tomato taste was a little strong for me. We will probably make it again with some minor adjustments.

Favorite Peanut Butter Cookies

These cookies are outstanding! I followed the advice here and baked them for only 10 minutes on 375. They are perfect! Very chewy and very tasty. This one is a keeper.

Chicken Fried Chicken

Reviewed: Feb. 3, 2008
I used the modifications another reviewer suggested (pounded the chicken breasts, dredged them in beaten eggs, coated them with the cracker mixture and baked for 45 minutes) and it turned out great! Some time we plan to fry it but the breading is delicious and it made for a great baked dish. I'm not a big chicken fan and even I loved it. (I had to up this to 5 stars. My husband LOVES it. He asks for the "baked fried chicken" all the time.)

Fried Butterflied Shrimp

Reviewed: Feb. 8, 2008
This was by far the BEST shrimp I've ever had. It was better than restaurant quality. Half of them never even made it to the table because we ate them right out of the pot. The ones that did make it were devoured in record time! We followed the advice to cut the water in half and added a little garlic salt and Emeril seasoning. Delicious!

Spicy Cajun Shrimp

Reviewed: Jun. 23, 2008
The first time I made this I really didn't care for it. I did not like the flavor of the thyme or oregano at all. I made it again without those 2 ingredients, lessened the salt to 1 tbsp, and added a pinch of chipotle and some Emeril seasoning. Much better! I also added a little extra oil to the seasoned mix because I thought the shrimp were too saturated with seasoning the first time. That helped a lot.

Poblano Chile Enchiladas a la Gringa

Reviewed: Jun. 29, 2008
This was pretty good! We used flour tortillas instead of corn. We bought a rotisserie chicken from the store and just shredded it. We boiled the water, garlic, onion, and bouillon and took out a cup, then tossed in the chicken and let it hang out in the mix while the peppers cooled. We tossed some spices (red pepper, chipotle) into the chicken mixture. We'll definitely add more next time, I think the chicken needed more flavor. I think the sauce was missing something but I can't put my finger on it. It was delicious but needed a little something more.

Annemarie's Lemon Bars

Reviewed: Jul. 7, 2008
I don't think I've ever given a recipe 1 star but I did not care for these at all! I added some extra lemon juice like a reviewer suggested but it didn't help. This came out very dense and bland, almost like a weird cookie - it wasn't my idea of a lemon bar. Way too much crust.

Newport Clam Chowder

Reviewed: Jul. 14, 2008
I gave this 4 because I thought it was a 3 and my husband thought it was a 5. He thought it was really delicious and requested that I make it again. I, on the other hand, thought it was sort of runny and just odd. I followed the recipe exactly. My butter/onion/flour mix was so lumpy and the lumps never dissolved. I think it has potential with modifications, but I will probably try another recipe before I attempt this one with modifications.

No Skill Fruit Tart

Reviewed: Jul. 14, 2008
This is outstanding and amazingly easy. I made it with peaches, strawberries, and plums. The crust was perfect (thanks especially to my stand mixer)! It was a big hit at home and I will definitely keep this one on file. If you're looking for a quick, yummy dessert, this is a great one. This crust is so good I've also used it for pie. I've gotten a ton of compliments on the crust and requests for the recipe. It's the best pie crust I've made.)

World's Best Lasagna

Reviewed: Aug. 25, 2008
This was so delicious! My husband raves about it and swears it's the best lasagna he's ever had! Even my in-laws and my husband's super picky grandmother agree. That's pretty impressive! I followed the recipe almost exactly. Though I've made minor alterations over time. I use ground turkey instead of beef because I don't eat beef. I also use hot Italian sausage in place of mild. I use extra garlic and seasoning, and add a little green pepper, but that's a taste preference. I did add a pinch of nutmeg to the ricotta mixture like someone recommended - not that I know if it makes a difference - ha. I also used wheat lasagna noodles and fat free (store bought) ricotta; it didn't negatively affect the taste at all. This is a staple in our house, and I get requests from friends and family quite often. Thanks for making me look like a great cook! =) Addition - I've had to adjust my diet since originally making this recipe. Last night I made this recipe but subbed gluten-free noodles for regular, and tofu for meat. I also added loads of veggies to the sauce. Still outstanding!

Tuna Noodle Casserole II

Reviewed: Sep. 2, 2008
I originally gave it 4 stars but I have to revise it and give it 3. It was okay on the first night but absolutely dry by day two. My husband kept eating it but I felt it was really bad as leftovers.
