Chicken Flautas

Reviewed: May 16, 2009
Excellent base recipe. I modified the chicken by making it in the crock pot in chicken taco soup (got the recipe from here, it's the best) which gave the chicken some nice flavor. We also brushed the tortillas with olive oil rather than soaking them with oil in a frying pan. I'll be serving these at a party, and I'm sure my friends will scarf them up!

Guacamole

Reviewed: May 4, 2009
I followed this recipe almost exactly and was pretty disappointed. I found it to be too salty even though I cut the salt in half. I also thought it tasted way too "limey" even though I reduced the amount of lime juice and used a small lime. My friend and husband, on the other hand, seemed to like it. They insist they were eating it because it was good, not to make me happy. Addition: It's better the 2nd day. The lime flavor isn't quite so strong.

Easy Roasted Red Pepper Hummus

Reviewed: Apr. 5, 2009
Followed the recipe exactly and it's not bad. Extremely easy and tasty. We used fresh pepper and lemon juice and I didn't find the lemon taste overpowering at all. I think next time I'll use a tad less tahini, roast the garlic, and toss in some cumin. It's definitely a keeper, and I think with a few minor modifications it would be restaurant quality.

Best Tuna Casserole

Reviewed: Feb. 2, 2009
Yum! I love tuna casserole and I've been searching for something I love as much as the stuff out of the box (ha). This was really delicious! Here are my only changes: I used whole wheat egg noodles.I used 1 can of mushroom soup and 1 can of cheddar soup (I like my tuna casserole cheesy). I omitted the mushrooms and peas because I don't like them. Used the onion, though I added a little fresh garlic. Oh, and I used food processed cheddar french fried onions instead of chips, since I really don't like chips. This is a great recipe and easily tweaked to suit the tastes of the people in the house. Thanks! It's a keeper!

Awesome Slow Cooker Pot Roast

Reviewed: Jan. 4, 2009
I followed the suggestions of sdgirl (Worcestershire, red wine, various veggies) and this was a truly awesome pot roast. My husband and I agreed it was the best ever! Thanks for the original recipe and the awesome additions!

Juicy Roasted Chicken

Reviewed: Dec. 31, 2008
I don't really like chicken, so I begrudgingly made roasted chicken at my husband's request. This was really good and I am near impossible to please when it comes to chicken. This chicken was SO juicy. We stuffed ours with celery, onion, and garlic. Yum! Next time we will add some more seasoning, but I can't dock the recipe, since seasoning is all a matter of preference. This chicken was so easy, it tastes like it took a lot more effort than it really did. My husband loved this chicken, I've never seen him attack roasted chicken quite like this. =) If you're looking for a delicious, fool-proof recipe, this is the one! (It did take a little longer than the hour and fifteen the recipe calls for, so I highly recommend a meat thermometer. It's a life saver!)

Garlic Mashed Red Potatoes

Reviewed: Dec. 31, 2008
Excellent! The only "change" I made was adding more garlic. My husband said these are the best mashed potatoes he's ever had! The consistency was absolutely perfect. With a little more garlic, these will rival the garlic mashed potatoes at my favorite restaurant. This one is definitely a keeper!!! (Addition: I made these again this week and used 6 large cloves of garlic. Perfect!) (Addition 2: I made the Shepherd's Pie VI recipe on this site and topped the dish with these potatoes...yum!)

German Chocolate Cake III

Reviewed: Dec. 13, 2008
My husband requested German chocolate cake for his birthday. I was a little nervous about making it, but I'm SO glad I used this recipe. The cake was fantastic. Everyone gushed over how moist it was. The icing was thin, but we really enjoyed it. It was almost more like a glaze than frosting. The only change I made to the original instructions was baking it for about 22 minutes instead of 30. I have a feeling I will be baking this one again - many times! Thanks. I didn't have cake flour, so I just mixed all purpose flour with cornstarch. Perfect. Addition: I've now made this cake 5 times and every time it barely lasts the evening. It is SO popular, even with my husband's picky grandmother. Many people have commented that it's the most moist cake they've ever had, and I agree! Follow the recipe exactly, with the exception of baking it for fewer than 30 minutes. It's top notch!

Slow Cooker Chicken Taco Soup

Reviewed: Nov. 21, 2008
Only change I made was chicken broth instead of beer. I also usually skip the beans since I'm not a fan. Oh, and I use Fiesta/Mexican corn instead of plain corn. We make this fairly regularly. I've also made it for a few parties and it's always the first thing to go! It's been a huge hit so thanks!! My only advice is to MAKE SURE you use the taco seasoning "recipe" that's offered in the first review. It really makes the soup. We also use it for other chicken items that need great flavor. I also add a few extra chicken breasts when I make the soup so they can soak up the great flavor, then put them in tacos or taquitos. Great recipe!

Easy Lemon Bars

Reviewed: Nov. 6, 2008
Not enough lemon filling or flavor and way too much crust. On top of this, the crust was not good. We only ate two bites (to try it) and threw the rest out. Waste of time.

Cheddar Bay Biscuits

Reviewed: Nov. 6, 2008
I am giving this recipe 4 stars because it took a lot of the suggested modifications to make these biscuits really good. Had I followed this recipe exactly I don't think I would have liked them very much.

Scallops with White Wine Sauce I

Reviewed: Nov. 6, 2008
I followed the recipe almost exactly, with the exception of following some suggestions to use less butter. It still tasted buttery and odd. It wasn't gross, but not good either. Won't make it again.

Black Cat Cookies

Reviewed: Oct. 29, 2008
I give this between a 3 and 4. They are cute and taste alright, but I think they were just more trouble than they were worth. I followed the recipe exactly and the dough was pretty hard to shape. It was also very crumbly.

Shrimp and Crab Bisque

Reviewed: Sep. 28, 2008
I made this because it had such great reviews but I really didn't care for it at all. I followed the recipe almost exactly - except I followed a reviewer's suggestion of adding extra seasoning and sherry instead of white wine. It tasted way too sweet, like a bowl full of cream. We ate the shrimp... I'm so glad I've had good seafood bisque before. If this had been my first bowl I never would have eaten it again.

Tuna Noodle Casserole II

Reviewed: Sep. 2, 2008
I originally gave it 4 stars but I have to revise it and give it 3. It was okay on the first night but absolutely dry by day two. My husband kept eating it but I felt it was really bad as leftovers.

World's Best Lasagna

Reviewed: Aug. 25, 2008
This was so delicious! My husband raves about it and swears it's the best lasagna he's ever had! Even my in-laws and my husband's super picky grandmother agree. That's pretty impressive! I followed the recipe almost exactly. Though I've made minor alterations over time. I use ground turkey instead of beef because I don't eat beef. I also use hot Italian sausage in place of mild. I use extra garlic and seasoning, and add a little green pepper, but that's a taste preference. I did add a pinch of nutmeg to the ricotta mixture like someone recommended - not that I know if it makes a difference - ha. I also used wheat lasagna noodles and fat free (store bought) ricotta; it didn't negatively affect the taste at all. This is a staple in our house, and I get requests from friends and family quite often. Thanks for making me look like a great cook! =) Addition - I've had to adjust my diet since originally making this recipe. Last night I made this recipe but subbed gluten-free noodles for regular, and tofu for meat. I also added loads of veggies to the sauce. Still outstanding!

No Skill Fruit Tart

Reviewed: Jul. 14, 2008
This is outstanding and amazingly easy. I made it with peaches, strawberries, and plums. The crust was perfect (thanks especially to my stand mixer)! It was a big hit at home and I will definitely keep this one on file. If you're looking for a quick, yummy dessert, this is a great one. This crust is so good I've also used it for pie. I've gotten a ton of compliments on the crust and requests for the recipe. It's the best pie crust I've made.)

Newport Clam Chowder

Reviewed: Jul. 14, 2008
I gave this 4 because I thought it was a 3 and my husband thought it was a 5. He thought it was really delicious and requested that I make it again. I, on the other hand, thought it was sort of runny and just odd. I followed the recipe exactly. My butter/onion/flour mix was so lumpy and the lumps never dissolved. I think it has potential with modifications, but I will probably try another recipe before I attempt this one with modifications.

Annemarie's Lemon Bars

Reviewed: Jul. 7, 2008
I don't think I've ever given a recipe 1 star but I did not care for these at all! I added some extra lemon juice like a reviewer suggested but it didn't help. This came out very dense and bland, almost like a weird cookie - it wasn't my idea of a lemon bar. Way too much crust.
