Slow-Cooker Chicken Tortilla Soup

I have a usual taco soup recipe but it's more of a meal and we wanted some tortilla soup that was light and brothy. This was definitely that and we really enjoyed it. The only changes I made was omitting the cilantro and adding some extra cumin, chili powder, and tossing in some garlic and onion powder. I also used only chicken broth instead of water. Oh, and I threw in raw chicken breasts and just let them cook, shredding them with about 30 minutes left. There's really no need to pre-cook the chicken. My only recommendation to make this better would be to use an extra chicken breast because it's a lot of broth without a lot of chicken. A little more chicken would make it perfect. It was very much like restaurant tortilla soup so if that's what you're looking for this is a good recipe to follow.

Southern Green Beans

Very good. I subbed white onion for red because it's what I had on hand, skipped the vinegar, and used turkey bacon instead of "real" bacon because I don't eat pork. I also used veggie broth in place of chicken broth. I think it needed way more broth than called for. I'll make my own little version of this again. It was a great side dish for barbecue!

Zesty Slow Cooker Chicken Barbecue

Pretty good and couldn't be any easier. After a few hours of cooking I shredded the chicken and returned it to the crock pot to hang out in the sauce. Next time I'll either use more chicken or less sauce, as I think it's a too saucy as written. But tasty and made a good football lunch.

Chicken Pot Pie IX

Anyway... I made this with potatoes instead of peas and added extra seasoning. It was quite good, but still a little bland for our taste. Next time I'll add more seasoning. But I can't really dock the recipe for a taste preference. However, as written this is NOT enough filling. It was really good day 1, but when I made leftovers they were SO dry it was practically inedible. So bad, in fact, that I considered dropping it from 5 stars to 3. Very, very bad the next day. Without a doubt double the filling. I used the Pie Crust IV recipe from this site and it was perfect.

Stuffed Bell Peppers

This was quite good. I eyeballed the amounts of onion, pepper, oil, and veggie crumbles rather than measure it all out. I also added mushrooms and garlic to the onion/pepper mix. Will have again.

Brilliant Sauteed Broccoli

This recipe easily gets 5 stars as written (it's very frustrating when people make a bunch of changes and give a recipe 5 stars). This was very easy and delicious. I would not be disappointed if I ordered it in a restaurant. The brown sugar and red pepper flakes were a fantastic balance of sweet and spicy. This is a keeper.

Garlic Crab Legs

Quick, easy, and delicious! I skipped the corn because I think seafood corn would be odd. I also removed the crab meat from the shell and sauteed it instead of using the crab in the shell. I think that worked out better. Thanks!

Best Chocolate Chip Cookies

I hate to give a recipe 1 star but I did not care for these. The dough didn't taste good at all, but I hoped they'd bake into something edible. I was not so lucky. I followed the recipe exactly as written, but I think it has WAY too much flour in it and that's what led to the funky aftertaste. I'll use a different recipe next time I need to make cookies.

Barbie's Tuna Salad

Minor changes: We used fresh, finely chopped onion and celery instead of onion flakes and added hard-boiled egg. Those are necessary for good tuna salad, at least around here. We also put less relish than called for because I'm not a huge relish fan. We also didn't measure the mayo. The dry seasoning itself was awesome, and that alone gets 5 stars. Thanks!

Hot and Spicy Tofu

Great base, gets 4 stars because of my changes. Next time we'll use extra firm tofu, I think it will cook up a little better. Subbed veggie broth for water, which gave it more flavor. Subbed white wine vinegar for regular and did not use 3 tbsp. Vinegar is really tart and 3 tbsp would be really strong. Used jalapeno in place of a green chile because that's what we had on hand and added a handful of shrimp and mushrooms. Next time we'll double the sauce, make it a tad spicier (in my opinion it's not that spicy as written), and slice the tofu differently, but otherwise a very solid recipe.

Bananas Foster II

This was really good. We used banana rum instead of regular/dark rum, skipped the walnuts, and added a flambe of Grand Marnier at the end. We cooked the bananas in the mixture for about 5 minutes so they could get a little candied. The key is to use green bananas - they are a little tougher since they aren't yet ripe, and they don't turn to mush.

Chocolate Covered Strawberries

I feel so dumb for ever buying chocolate covered strawberries! I never realized they were SO easy! I melted my chocolate/shortening in a mini-crockpot since I don't own a double boiler. I used store brand chocolate chips and they taste like they came from a chocolate store. I can't wait to serve these to my family and friends. Oh, and I had extra chocolate so I covered some banana chunks. Mmmm...

Hot Artichoke and Spinach Dip II

I originally rated this 3 stars but after reheating it and trying some a few hours after it baked, I have to adjust that rating. I made it as stated, and it's just not good. It's got a weird taste. Definitely read the reviews on this one. It seems like a lot of the people who gave it 5 stars were rating their own version of the recipe. The Spinach & Artichoke Dip Restaurant Style recipe on this site is much better.

Homemade Black Bean Veggie Burgers

I had to give this 4 stars just because I made a few changes. But this is a great base recipe, and I really think it would be delicious as written! In case you want to know here is what I did: chopped the veggies (peppers, jalapeno, onion, garlic) in the food processor and sauteed them; used a mix of bread crumbs and oatmeal; seasoned to taste and not by tsp or tbsp; and added Worcestershire and liquid smoke. I did not add extra breadcrumbs or egg. The mixture was fine. If you grill, watch the time. We had to grill for a little longer than written. But this made a fantastic veggie burger. We won't ever buy store brands again. Thank you so much for the wonderful ideas!!

Grilled Onion Potatoes

This recipe is pretty mediocre when you follow it as written. It has potential, but I didn't think the potatoes were very flavorful with just onions and the dressing. The potatoes were also pretty soggy by 40 minutes on the grill, so watch the time carefully. 50-60 minutes is way too long. At least on our grill.
