Vegetarian Chickpea Sandwich Filling

This is excellent. I can't wait for lunch tomorrow. Quick, easy, healthy, and versatile. Very nice! I added extra mayo because I found it a bit dry. I added nutritional yeast and some garlic because they do well with pretty much anything.

Cajun Style Stuffed Peppers

I sort of found this unremarkable. I had to make a lot of changes to make it okay. Boiling the peppers takes longer than 3 minutes if you really want them softer. I precooked the rice because the way this is written sounded like it would result in crunchy rice (as some reviews said it did...). I used the Creole seasoning recipe from this site which is always good. I ended up making a sort of "casserole" dish where I layered peppers on the bottom and the other ingredients on top. This gave the dish a nice pepper flavor. I've made various types of stuffed peppers, which is why I tried this, but for me it was better served with peppers but not stuffing peppers. In the future I think I'll just dice the peppers and make it a different dish. Hence the rating. It was worth a shot though, and did give me some decent ideas so thanks for that.

Strawberry Pretzel Salad

Super simple and tasty. I use fat free cream cheese and fat free cool whip and it comes out just fine (sorry, Paula Deen). I add pineapple but that's a personal choice. Also add some vanilla and brown sugar to the pretzel layer for the same reason.

Fantastic!!! I made a few changes based on personal choices but I guarantee as written this rocks - hence a justified 5 star recipe. All I did was sub veggie broth for chicken broth and add Lima beans and potatoes. Used dried basil and such becasue I'm cheap. Oh, and added a can of diced Italian tomatoes. Delicious, filling, and healthy. Yum!! Side note - I suggest Quinoa pasta shells. That's the very best pasta brand. :)

Kiki's Borracho (Drunken) Beans

I grew up in San Antonio and living now in the Midwest I really (REALLY) miss the food. This wasn't exactly like the borracho beans I'm use to but it was still delicious! I didn't soak the beans overnight (didn't have time) but I did soak them for about an hour. I found that to be adequate. I used Dos Equis instead of dark beer (just don't like dark beer) so it may have lost some flavor because I did that. Otherwise the only adjustments I made were using fresh jalapeno over jarred because I have a ton from my garden. I also used cilantro paste because I hate cilantro leaves. This is one I'll definitely make again so thanks!

Mexican Rice III

I thought this was really good. No, it's not super authentic but that doesn't mean it wasn't tasty! It did need two cups of broth instead of 1.5 (as christina b said you need twice as much liquid as rice...) but otherwise I made this as written and the flavors were very nice. Thanks for a quick and easy recipe.

Fresh Southern Peach Cobbler

I thought this recipe was great. Next time I'll use more peaches but otherwise I wouldn't make any changes. Reminds me of the peach cobbler I ate growing up. It was also a big hit with my friends who've somehow never had peach cobbler (what?!).

This rating is for the recipe as written. Though with a few modifications it was excellent. I did sub turkey for beef and roasted eggplant (and potatoes) in the oven rather than fry. I found it necessary to turn up the heat and add a little cornstarch to thicken the sauce. I added the stiff peak egg whites like others have done. I also only did one layer because two didn't sound/look appealing and there wasn't room anyway. This recipe proved a nice foundation for the dish. Thanks for sharing.

Traditional Style Vegan Shepherd's Pie

The potatoes alone get 5 stars. I wanted to eat them all out of the bowl before they made it to the oven! I followed the recipe as written except I added cheese to the potatoes. I used Daiya cheddar substitute because it's soy and gluten free. Yum!! I followed the bottom layer recipe almost exactly, though I used green beans and broccoli instead of tomatoes and peas (don't like them), and added mushrooms. For the meat substitute I used Boca crumbles. This is definitely going on rotation in my house!! Thank you.

Baked Vegetables I

I made this recipe as written with the exception of boiling my potato chunks for a few minutes before they went into the oven. Even with the boiling they still needed more baking time. Unfortunately the broccoli and zucchini were done, so I pulled the dish out to salvage those (plus my main dish was done). The carrots were also way undercooked. I think the soup mix was too dry so I added some veggie broth just for moisture and I'm glad I at least did that. This has potential but needs some adjustment. I notice that many of the 5 star ratings are based on adjustments and not the original recipe. Maybe I'll make it again combining the reviews and some adjustments.

Easy Deviled Chicken

This was very good. I used spicy mustard, fat free mayo, fat free spread, and splashed a little worcestershire. Didn't have stuffing mix but bread crumbs and some herb panko subbed just fine. The cooking time listed is too long. We left it in for about 45 minutes and it could have come out sooner. I will make this again, but adjust the cook time. It has a lot of potential. Thanks.

Creole Cornbread Stuffing

This was very interesting and quite good. I made it for Thanksgiving, though, and didn't really think it worked with turkey. I will make it again but this time use it as a side for a spicier creole-style dish.

Slow-Cooker Chicken Tortilla Soup

I have a usual taco soup recipe but it's more of a meal and we wanted some tortilla soup that was light and brothy. This was definitely that and we really enjoyed it. The only changes I made was omitting the cilantro and adding some extra cumin, chili powder, and tossing in some garlic and onion powder. I also used only chicken broth instead of water. Oh, and I threw in raw chicken breasts and just let them cook, shredding them with about 30 minutes left. There's really no need to pre-cook the chicken. My only recommendation to make this better would be to use an extra chicken breast because it's a lot of broth without a lot of chicken. A little more chicken would make it perfect. It was very much like restaurant tortilla soup so if that's what you're looking for this is a good recipe to follow.

Southern Green Beans

Very good. I subbed white onion for red because it's what I had on hand, skipped the vinegar, and used turkey bacon instead of "real" bacon because I don't eat pork. I also used veggie broth in place of chicken broth. I think it needed way more broth than called for. I'll make my own little version of this again. It was a great side dish for barbecue!

Zesty Slow Cooker Chicken Barbecue

Pretty good and couldn't be any easier. After a few hours of cooking I shredded the chicken and returned it to the crock pot to hang out in the sauce. Next time I'll either use more chicken or less sauce, as I think it's a too saucy as written. But tasty and made a good football lunch.

Chicken Pot Pie IX

Anyway... I made this with potatoes instead of peas and added extra seasoning. It was quite good, but still a little bland for our taste. Next time I'll add more seasoning. But I can't really dock the recipe for a taste preference. However, as written this is NOT enough filling. It was really good day 1, but when I made leftovers they were SO dry it was practically inedible. So bad, in fact, that I considered dropping it from 5 stars to 3. Very, very bad the next day. Without a doubt double the filling. I used the Pie Crust IV recipe from this site and it was perfect.

Stuffed Bell Peppers

This was quite good. I eyeballed the amounts of onion, pepper, oil, and veggie crumbles rather than measure it all out. I also added mushrooms and garlic to the onion/pepper mix. Will have again.
