Traditional Style Vegan Shepherd's Pie
The potatoes alone get 5 stars. I wanted to eat them all out of the bowl before they made it to the oven! I followed the recipe as written except I added cheese to the potatoes. I used Daiya cheddar substitute because it's soy and gluten free. Yum!! I followed the bottom layer recipe almost exactly, though I used green beans and broccoli instead of tomatoes and peas (don't like them), and added mushrooms. For the meat substitute I used Boca crumbles. This is definitely going on rotation in my house!! Thank you.

Baked Vegetables I
I made this recipe as written with the exception of boiling my potato chunks for a few minutes before they went into the oven. Even with the boiling they still needed more baking time. Unfortunately the broccoli and zucchini were done, so I pulled the dish out to salvage those (plus my main dish was done). The carrots were also way undercooked. I think the soup mix was too dry so I added some veggie broth just for moisture and I'm glad I at least did that. This has potential but needs some adjustment. I notice that many of the 5 star ratings are based on adjustments and not the original recipe. Maybe I'll make it again combining the reviews and some adjustments.

Easy Deviled Chicken
This was very good. I used spicy mustard, fat free mayo, fat free spread, and splashed a little worcestershire. Didn't have stuffing mix but bread crumbs and some herb panko subbed just fine. The cooking time listed is too long. We left it in for about 45 minutes and it could have come out sooner. I will make this again, but adjust the cook time. It has a lot of potential. Thanks.
