Slow Cooker Honey Garlic Chicken

Reviewed: Apr. 15, 2012
This was great! The family loved it for dinner. I made it as the recipe stated except I used fresh pineapple and added some minced onion. I was going to cook it in my slow cooker, but I used my electric skillet instead. I cooked it for a few hours. I used bone-in chicken thighs and breasts. The meat was very tender.

Chocolate Cavity Maker Cake

Reviewed: Aug. 4, 2011
Such a wonderful cake, but so easy to make! I followed the recipe exactly except I put less choclate chips in. I would go ahead and put all of them in the next time, and maybe experiment with some white chocolate or mild chocolate chips. We had several people over for a casual party, and the entire cake was gone by the end of the night.

Marinated Greek Chicken Kabobs

Reviewed: Aug. 17, 2009
This was a great recipe! I would never have put these ingredients together, but they really worked. I added a little bit of white wine and some minced garlic and shallots that I had on hand from another recipe. I left out the lemon zest, but I should have added it to give it a stronger lemon flavor. I sprinkled on some extra rosemary and oregano before I put it on the grill. The feta and yogurt coated the chicken and kept it moist, but I should have oiled the grill more before I cooked it. The chicken stuck a bit. I grilled some shrimp also and served everything with some couscous.

Black Bean Salsa

Reviewed: Jun. 13, 2009
I made a few changes to give it more flavor: used Ro-tel tomatoes with chilis for the canned tomatoes, added a good amount of cilantro directly to the salsa, added some garlic powder (fresh minced garlic would have been better). I let everything marinate overnight and it was delicious with corn chips.

Dry Rub for Ribs

Reviewed: Dec. 13, 2008
I use this rub recipe with the Baby Back Ribs recipe by KHEFFN from this site. The ribs always turn out amazing. I would prefer a rub with a little more spice, but I think this is perfect to serve to guests.

Baby Back Ribs

Reviewed: Dec. 13, 2008
These ribs are excellent and so easy to make. Like previous reviewers, I put a brown sugar rub on the ribs, coat them with Sweet Baby Ray's, and let them sit overnight in foil. Then I bake them as the recipe calls for. I'll let them sit in the foil until I'm ready to grill them. Then I'll put them on the grill to get them hot and a little crispy, and I'll put more Sweet Baby Ray's on them.

Angel Chicken Pasta

Reviewed: Oct. 17, 2008
My husband absolutely loved this recipe. I liked it but didn't love it. I doubled the recipe except for the italian dressing--only added one package of that. I left the butter out and I cut the chicken into pieces. I threw it all in the crockpot and added the cream cheese at the end of the cooking. I will definitely make it again because it is so easy and such a favorite with the husband.

Fruitcake

Reviewed: Oct. 17, 2008
This was my first time making fruitcake and it turned out excellent. I'm giving the recipe 4 stars instead of 5 because it needs some modifications. I followed the advice of past reviewers--I soaked the dried fruit in brandy for a day and I baked the fruitcake for 3 hours at 225. I used dried cherries, cranberries, and apricots (in addition to the raisins). Another modification I made was to cut the spices in half. I like a lot of spices, but I feel that if I had put in the amount in the recipe it would have been overpowering. I doubled the recipe and it filled 6 medium loaf pans (I think they were 3 x 5). My husband and I sampled one of the loaves right out of the oven and it was delicious. I have the remaining loaves resting in the refrigerator and will drizzle brandy on them occasionally. I will add more information to this review after the loaves have sat for a couple of weeks. I think that there could have been more fruit and nuts added but I'll see what it tastes like after it has sat.

Jamie's Cranberry Spinach Salad

Reviewed: May 25, 2008
I've made this twice--once for my family and once for co-workers. It went over extremely well both times. This is a GREAT salad! I read through previous reviews to see what other people added or changed, and based on the reviews I made some changes myself. I omitted the poppyseeds (only because I didn't have them), added mandarin oranges, and added some feta cheese. I used Craisins for the cranberries. I didn't use the butter on the almonds--I just toasted them in the oven at 350 degrees for about 10 minutes. I added some garlic powder to dressing, and I grated the onion instead of mincing it. It's also important to let the salad sit for 20 minutes or so with the dressing on it before serving. This salad looks pretty on the plate with all of the colors, and it is SO good. I can't get enough of it! I didn't realize how much I could like spinach!

Creamy Potato Pork Chop Bake

Reviewed: Aug. 7, 2007
I'm not sure why this recipe didn't turn out as well for me as it did for most everyone else. The pork chops weren't very tender, and the sauce/potato mixture came out way too soupy. I left the fried onions out--I didn't think it would make a big difference, but maybe it did. The flavor of the dish was good, but it had too much liquid in it. If I made it again, I'd double up the amount of potatoes to absorb some of the liquid.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Reviewed: Aug. 2, 2007
This was excellent and looked beautiful on the plate. I made it like the recipe called for, except I sliced the pork loin chops thin and pounded them. I was worried that the thick chops would be too tough. I also used all red tomatoes because my store didn't have yellow ones. I served the pork chops with roasted asparagas and fresh bread. I will make it with risotto the next time.

What a great, simple meal to make. My husband loved it. I made it exactly like the recipe called for except I made double the sauce. Great comfort food, and the leftovers were great the next day.

Christmas Breakfast Sausage Casserole

Reviewed: Jul. 8, 2007
Great recipe--used it for Mother's Day and for a casual breakfast with friends. I followed the advice of past reviewers--started with a box of Marie Callender's garlic cheese croutons on the bottom, added the sausage next, then 2 cups of sharp cheddar cheese (I like a lot of cheese!), then 6 eggs mixed with 1 cup of half and half. For mother's day, I added a layer of sauteed onions, green peppers, and mushrooms and cut the sausage in half. I liked the one with the vegetables better.

D's Famous Salsa

Reviewed: Jul. 8, 2007
This was my first attempt at making salsa, and it turned out great. I followed the advice of previous reviews and drained the liquid from the tomatoes before using. I made a double batch, and used 3 cans of stewed tomatoes and 1 can of petite diced tomatoes. I processed the stewed tomatoes with the other ingreadients, then added the diced tomatoes to give it more texture, but I still didn't think it was chunky enough. Next time I will just process 2 cans of stewed tomatoes then add 2 cans of diced to give it more texture. I doubled the garlic because I love garlic, but will probably use what the recipe calls for the next time. It was too garlicky for some people. I will also probably add the onion after processing the tomoatoes. The onion flavor is strong because it gets so fine. I love onions just like garlic, but it is too strong for some people.

Easy Cajun Jambalaya

Reviewed: Jun. 8, 2007
I thought this recipe was pretty good and easy to make. I added a can of diced tomatoes and changed the seasonings. I left out the hot sauce, cayenne, garlic, and onion powder and I added some creole seasoning and garlic powder. It wasn't my husband's favorite, but he isn't that fond of rice. I thought it was great and made great leftovers too.
