Vegan Apple Carrot Muffins
i made a bunch of changes, of course, i left out the white sugar, added figs, lemon juice, maple syrup, omitted the oil, added a bit more apple sauce, halved the baking soda and salt. i recommend baking at a higher temp, they're a dense, delicious muffin!

Healthy Banana Cookies
Yum!! I'm always on the lookout for healthy yummy treats, and this one didn't disappoint. I subsituted the oil for 1/2 cup applesauce, and since i didn't have dates i used prunes, cranberries and sunflower seeds. I also added an extra tsp. of vanilla, 1 tsp. of cinnamon and 1 tsp of nutmeg. I cooked them for 15 minutes only, and the result was soft chewy deliciously sweet cookies! If you're a fan of healthy sweets, you'll love these. I'm excited to try them with dates, or maybe figs and lemon juice + zest instead of vanilla. Will definitely make these over and over!

Chewy Chocolate Chip Oatmeal Cookies
AMAZING cookies. I did change it a bit, as suggested i added and extra 1/2 cup of flour and of oats, omitted the salt(i had to use salted butter), and added a 1/2 tsp of baking powder. I refridgerated the cookies for a half hour so the wouldn't spread and baked them for 12 minutes at 350 degrees. They turned out PERFECT. Soft and chewy and delicious. I would love to try adding cinnamon or nutmeg next time, i love spicy chocolate. Make these! and enjoy!
