Yummy Honey Chicken Kabobs

I used chicken, beef and shrimp (all marinated seperately) and another bag of vegetables (onions, peppers, squash and zucchini). This was fantastic. I let it marinade for over 24 hours.

Chipotle Crusted Pork Tenderloin

This was fantastic. I was afraid to use too much of the chili powder because I can't handle spicy foods. I double the recipe (we had a big party), which would have been 6 tbsp of chili powder. I only used 2-3 and I couldn't taste any of the chili powder. I also had to use a regular pork loin, not a tenderloin, because of cost and the amout of people we had. I was REALLY suprised at how amazing this turned out. I did take advice from others and marinate it in pineapple juice for several hours before.

Red Velvet Cupcakes

The cake was good. I have had better but it was OK. The frosting tasted good but it was way too soft to decorate a cupcake. I had to double the 10x sugar to make it stiff enough to decorate. By doing that, it overwhelmed the flavor.

Christmas dinner - Very easy but took A LOT longer then the timer said and it was still more rare then we wanted. We were hoping for a medium with some of the ends more well. There was only one small piece that was well.

Lemon and Raspberry Trifle in Mason Jars

This was a lot of work but I modified this to work in a large trifle bowl. I double the ingedients, plus added in 2 batches of homemade whipped cream from this site. I layered half of the pound cake and few raspberries in the bottom of the bowl and sprinkled with a good amount of the water/lemon juice/sugar mixture. Then, after mixing the cheese, lemon curd and lemon zest, I added half of the mixture to one batch of whipped cream and layered on top of the cake/raspberries. I basically did two layers of this, topping with the cream/cheese/curd mixture. On top, I added some plain whipped cream, the raspberries and chocolate shavings. The cheese/curd mixture was way too strong if left alone. It was great when mixed with the whipped cream.
