I have a husband and 3 adorable little girls. We live in beautiful NC, home of the white (not albino) squirrels. I LOVE baking and cooking and throwing parties where I can serve lots of of different recipes.
My favorite things to cook
Love to make breads, cookies, cakes, muffins, soups, and most everything else from scratch.
My favorite family cooking traditions
At least once a month having a big breakfast with omelets, bacon, potatoes, and waffles or pancakes. Also bringing fresh warm goodies to friends and family in winter when it's cold outside and warm yummy food makes you happy.
My cooking triumphs
Making the best cheesecake I've ever had on my 1st cheesecake attempt. Becoming a professional baker, after I finally listened to everyone telling me "this is sooo good you should have a bakery/ or you should sell this" about almost everything I fed them.
My cooking tragedies
having a pot that seemed unable to handle being on a stove (seriously, this pan tried to burn water) and ruined a BIG batch of meat and vegetable sauce for spaghetti

Double Layer Pumpkin Cheesecake
This is really good, a few notes however, DO NOT use a stand mixer for this recipe, it will not reach all parts of the cream cheese and will leave chunks. Also I read others used pumpkin pie mix instead of the puree, I did this by accident and the person buying it no longer liked it, the pie mix has condensed sweetened milk in it and adds too much liquid and makes the top more a pumpkin pie over a cheesecake, make sure that is something you want before doing that, if you use the pumpkin puree both layers with be a cheesecake consistency but the top one will taste like pumpkin, everyone I've made it for loves it this way and didn't like it with the pie mix.

Autumn Cheesecake
This was described as "the best thing ever" by several of the people I sent samples to, and I then received a special order for it from 4 different people. This is a BEAUTIFUL cheesecake, great even if it cracks (which shouldn't happen if you don't overbeat after you add the eggs) since you can cover it with the pecans and apples. I doubled the recipe except for the apples, I used about 2 1/2 very large MacIntosh apples very thinly sliced, spread evenly over the top then sprinkled with cinnamon sugar, and the pecans. I drizzled caramel over the top when it was done cooking. I followed the instructions given by NOELC, some stated above and the cook for 70 minutes then leave in the oven for 45-60 minutes with the oven off and the door cracked. Thank you for this recipe.

Pecan Pie V
I personally hate pecans and therefore didn't even try this, but I made a bunch and sold them at a local high scale specialty grocery store and when we did taste tests everyone LOVED it, and some said it was the best pecan pie they'd ever tasted. They also loved the simple ingredients without trans fats that are caused by corn syrup. It did look different then the one show as the main picture at the time I got the recipe. And for anyone interested this recipe actually seemed to improve by quadrupling, didn't compromise flavor, texture, or anything.
