Stuffed Turkey Legs

These didn't knock my socks off, but they were very tasty for a weeknight dinner.. Like others have said: Cut the oil in half and the salt to 1 tsp or less. To make it easy, I just sauted and stewed everything together in a close fitting pot with cover, and on top of the stove. Skip the stuffing business too. I'll make this again.

Grilled Gyro Burgers

Wonderful flavor for a unique sandwich... I tweeked the recipe by using low-fat sour cream, Italian dressing mix (usually no MSG), skipped the lettuce but added slivered red onion to the cucumber mixture.... Then garnished with fresh cilentro and lime wedges to squeeze over the fillings. I thought it was flavorful, juicy, and a refreshing change from just another burger!!

Honey Baked Chicken II

Five stars for this one.... actually I used thick pork chops instead, but this seasoning blend is what makes it special. If anyone wants to try the chops, I baked them less time and about 325 degrees... Then softened some apple slices in the microwave, laid them over the chops (drizzled with the pan juices) for the last 15 minutes... Oh Yeah!

Pasta Melanzana

I LOVE eggplant, but this recipe just didn't blend for me. Perhaps if you are a vegetarian it would be good for you since it is filling, but I didn't like the combination of the pasta and spinach with the eggplant. Perhaps preparing just the eggplant would be OK... but I can't see that I'd ever think of serving it to company, and that's one of my criteria for a good dish. Rating it a one means I threw it out and rating it a two means I ate it but don't think I even want to save the recipe.

Swan's Summer Soup

Fabulous, refreshing, and yet a satisfying finish to a hot summer day... freshness and quality of ingredients is imperative. Like others, I used prepared tomato juice to start, tomatoes from the garden, fresh (uncooked) corn off the cob, and threw in some fresh basil too. I served it along with some sauteed baby scallops, which my husband put in with his soup and enjoyed that way. And, as someone suggested.... the loaf of three-cheese bread and fresh, fruity olive oil was super!! I might suggest preparing, chilling, and serving the soup in the same day to keep the flavors their freshest.

Shrimp over Cheese Grits

I'll make this again... the grits were good just as listed, but I'd jazz up the shrimp with maybe a minced jalapeno, some sliced black olives, some smokey paprika, and (of course) garlic!! By the way, the leftover shrimp mixture and a little cheese was great in my omelet the next morning.

Wonderful flavor... I used chunks of chicken breast so it cooked just a little faster, then served it over rice, and garnished with chopped fresh cilentro and green onion. Also, I used a less salty soy sauce (one I get that's made in Hawaii). What a great meal served with sauteed (stir-fried) boy choy or other greens!

Baked Scallops

I'll go 5 stars because the flavor was rich but complimentary and yet SSOoo easy! I used Italian bread crumbs and they tasted fine. I didn't put in the extra garlic, but will next time BUT I'll saute it in the butter first!

Homemade Mac and Cheese

I had to try this recipe ever since I read the rating critizing it for being loaded with "fat" ie CHEESE... Duh, that's what Mac and cheese is about!! I made it with large elbow macaroni so the sauce got all inside the pasta... thru in an extra 1/2 inch slice of Velveeta and some white pepper, and jazzed up the crumbs by mixing the crumbs, melted butter, paprika, onion powder, salt & pepper and then sprinkling over the top. Very good "old-home" taste!!

Amish Breakfast Casserole

Slow Cooker Barbecue Goose Sandwich

So simple, so good.... the guys loved it with a little extra BBQ sauce added to their sandwiches. We cooked it just as it said with about 1 1/2 cups of Masterpiece BBQ sauce added at the end and then warmed thru. Makes a simple, homey, and comforting meal. I'll bet even our goose-hating friend would enjoy this recipe.
