White Bean Breakfast

It was full of flavors... however that was the thing... I served it with a large side of fresh, sweet sauteed eggplant, crookneck squash, onion, and garlic straight from the garden... and if I hadn't had that on the plate, this would have been just so, so... I appreciate the chance to get more beans in my diet, but unfortunately, this recipe coupled the beans with a big dose of oil too...

Best Italian Sausage Soup

Although this is a good basic recipe, it just wasn't "finished" for me until I also added some mushrooms, beans, and chopped cabbage/chard/or spinach... and, for ease of eating, changed the pasta to a spoon-size type (ie, small shells or elbows).

Black Bean Hummus

Does not replace regular hummus, but adds another great and healthy addition to my menus... I did not bother with the garnishes. Hubby says this is the first hummus he actually LIKED... (well, he's a little old fashioned in his food selections).

Hearty Breakfast Muffins

These are terrific and about as healthy as you can get a muffin and still have it taste good... the oil, salt, & sugar being the negatives, but this makes 12 big hearty muffins, so 1/4 cup oil divided by 12?? I'm not gonna worry, altho I usually use light olive oil... AND, I love the flexiblity of this recipe... subbing dark or white raisuns, prunes, dates, cranberries, nuts... I made without the nuts or coconut and they were still wonderful. I use the old-fashion rolled oats so they add texture, especially if I don't add nuts. I like to shred the carrots very fine so they nearly disappear, no one guesses they're in there. You'll probably get more than 12 muffins if you add all the fruit & nuts... get out 2 pans to be ready. I now double the cinnamon and ginger, both good healthy spices, and sometime I'll add some flax seed and/or bran, added healthiness!! Thanks for sharing this recipe!!

Avocado Green Goddess Dressing

Not what I want for a salad dressing... Prepared as listed, it was thick, heavy, and somewhat muddy... I felt like I wasted a good avocado... would have enjoyed my salad with chunks of avocado instead of whizzed into the dressing... the third night, I added more lemon juice, garlic, olive oil, blk and cayenne peppers, and some Parmesan... and enjoyed it way more....

Artichoke Salsa

I loved this new combination of fresh flavors... with pita chips was good... then I made a salad with shredded romain topped with brown rice, the salsa, and some avocado slices. Pretty on the plate, healthy, and refreshing. I'll save this recipe for summertime!

Potato Waffles

Dear Wifey- I nearly flew to my waffle iron to try your recipe and the flavor did not disappoint. I did tweak the recipe (as I always do potato pancakes) by adding 1 tsp of onion powder and 1/2 tsp white pepper and omitting the garlic (and I use Russet potatoes)... The problem I can see happening to others (as it did to me), is that everybody's recipe for mashed potatoes is going to vary in texture and moisture... so my first two waffles turned out so tender I could hardly get them out of the iron. By the third waffle, I had added probably double the flour, used 1/2 cup of batter, and cooked it over 7 minutes. I have a great waffle iron (been using it for 30 years) so I know to have it thoroughly preheated and normally can cook any waffle recipe in exactly 5 minutes. I will definitely try the recipe again with either less potato or more flour because I love your idea... good use of leftover potato, reduced use of oil, fun to serve, and good flavors!

Lentil Quiche

Good basic recipe... surprisingly and satisfyingly rich and hearty. My favorite is just as printed but substituting thin sliced carrots and cauliflower florets for the broccoli. I also used plain almond milk for the dairy and make sure it's a sharp Cheddar!!

Creamy Cheesy Scrambled Eggs with Basil

Surprisingly good! Serve alongside some cold poached salmon, a FRESH fruit cup (peaches!), and a special toast or muffin and you'll think you woke up at a Bed & Breakfast! Using a Teflon pan will help you get the eggs out of the pan. I also liked substituing sharp Cheddar for the Mozzarella and adding a dash of garlic powder as someone suggested. Another idea I like... is topping my sunnyside-up eggs with a few small basil leaves a minute or so before they're done... adds color and spice to them!!

Butternut Squash Soup II

Very good recipe.... makes a thick and flavorful soup. I have another squash soup recipe with curry seasoning and a recipe with squash, tomato, and black beans... so didn't really think I needed to try this one, but was glad I did!! I added a little garlic, curry, and cayenne that others have suggesested and served with the dollop of sour cream and sprinkle of dry cilantro or basil for garnish. Do not leave out the blender (or wand) step to insure that smooth consistency.

Breakfast Pies

I give 5 stars for it's versatility!!!.... I made spaghetti squash pies!! Really!... moist, touch of sweetness, lots of flavor... I sprayed bottoms only of muffin pan, then smooched refrigerated BREADSTICK dough around the sides and slightly in bottom and around rim. My filling: 1 link Italian sausage & 1/2 a small onion (precooked), added to 3 eggs, 2 T chopped fresh basil, 1/3 C grated Cheddar, 3/4 C precooked spaghetti squash. Made 12 pies... baked 25 mins at 375 degrees.

German French Toast

Not sure what provoked me to try this recipe... I guess because I was only cooking for myself and I like eggs, cheese, toast, butter... Frankly, I will never admit to my classy friends that I actually ate this, nor will I serve it to my husband, however I'm thinking if I'd just had a date with a guy that took me to one of those crazy beer restaurants that likes to serve a burger patty in a taco shell and taco meat on a bun... then (in the morning?) this recipe might just bring him down on one knee!! Ha!... good in a mom's comfort food sorta way. I used a Cheddar cheese and maple syrup.

Perfect Flat Iron Steak

Made this last night just as directed, except had to sub prepared brown mustard, and it does make a very tasty steak. I used 1" thick filets, med-rare, cooked 3 mins each side. Very pretty sliced on the platter too. Might try topping with some sauted mushrooms next time.

Tortellini Bites

Sorry, this was nothing but thickened chicken broth with dry basil in it. In my opinion, it neither tasted good, nor looked appetizing. Read the other reviews... most of the people that liked it did NOT follow the recipe. I'm sure I would have enjoyed plain-water cooked tortellini tossed with butter and Parmesan far more.

Persimmon Bread I

Make MUFFINS-- I rate this 5 because it's a great thing to make when you've got persimmons coming out your ears, but I would never BUY persimmons to make these. I used 1/2 brown sugar, added 1/2 tsp allspice and 1/4 tsp nutmeg, and then baked in paper muffin cups at 325 for about 35 minutes. Makes about 18 medium-size muffins. Perfect for snacking with tea or for breakfast. Next time I might add coconut, dates, or dried cranberries or apples.

NuNu's and Hot Dogs

WOW! Best hotdogs I've had since last state fair (and come to think of it, I liked the coating, not the dog). This is the perfect quick recipe to make when you're hungry and DON'T want to cook... ie. beats fast food, hands down. It's also the perfect thing to serve alongside a big serving of steamed veges... or if your kids (and spouse) are food-educated and open-minded, saute the veges right in with the hotdogs. It's a five star for it's simplicity.

BUSH'S® Country Cornbread Hoppin' John

We all enjoyed this for a quick lunch or simple dinner. It was surprisingly good "comfort food"... but, I guess you have to enjoy black-eyes before you're gonna like this dish. I've also made it with breakfast sausage instead of the bacon and it's equally as good and maybe a little "meatier" tasting for heartier eaters.

Golden Yam Brownies

These were good, but certainly not heavenly... nor, if you check the butter and sugar content, particularly healthy. But, on the positive side, they were a unique dish to serve and they did disappear!! I used only half the icing and they were plenty sweet, can't imagine using the entire bowlful.
