Peanut Butter Noodles

For those with nut allergies or are cooking for someone who does, I used Sunflower Seed Butter (from Trader Joes)instead of Peanut Butter. No one could tell and it was quickly gobbled up. If you like extra sauce or plan on adding protein (chicken, shrimp) to the sauce, I suggest tripling the recipe. I doubled it, added shredded chicken and barely had enough sauce to cover the noodles. I served this over capellini. Very good and so easy!

Garlic Chicken Fried Chicken

If using drumsticks, make sure to boil the chicken first to cut the fry time (thus avoiding overcooking). Very good, my family loved it!

White Chili with Ground Turkey

Wonderful flavor and even better served over basmati rice. I didn't have canned chilis so I substituted in pepper jack cheese. Next time I will cut the broth so it's less soupy. Definitely a keeper!

Cajun Pasta Fresca

Mexican Lasagna

Good satisfying meal. I served it with spanish rice, lettuce & salsa and the meal was complete. There are similar recipes on this site that are a little more involved, but sometimes simple is better.

My Mom's Swiss Steak

Good one pot dish, great flavor. To cut the cook time, I sliced the steak before cooking it. I also added the extra water while the steak was simmering since I like the extra sauce. If I didn't add the water, the meat would've burnt.

Cajun Chicken Pasta

Very good recipe. Make sure to pick a good cajun seasoning. I highly recommend "Joe's Stuff" or, if you like heat, "Joe's Hot Stuff". It's also best to let this dish sit awhile in the pan so that it's not soupy and the flavors can absorb into the pasta. We enjoy this on angel hair pasta.

Linguine with Chicken and Sauteed Vegetables

With a little tweaking, this dish is very good. Changes I made: 1)Omitted the cilantro, 2)Used olive oil instead of vegetable, 3)Added extra broccoli, carrots & cauliflower, 4)Instead of boiling, stir-fried the vegetables after the chicken was cooked, 5)Used angel hair pasta instead of linguine. Although the dish smelled great, the pasta was dry and didn't have enough flavor. 6)I threw in some oyster sauce & a little more soy sauce and it made a world of difference. My husband went back for thirds!

Angel Chicken Pasta

This is one of the better chicken recipes I've tried in a while. The lower heat/long cook time makes the chicken moist and tender-- soft enough to cut with a fork. Definitely a keeper!

Maple Salmon

Awesome Slow Cooker Pot Roast

Replace the cream of mushroom with "Cream of Golden Mushroom" and this pot roast is delicious. To feed 4 adults I halved the recipe (2.5 lb roast). I seasoned with garlic powder, salt & pepper and dredged in flour before browning in olive oil (I'm not comfortable cooking raw meat at low temps). I cooked for 4 hours on low & 2 hours on high and the meat was very tender. I wanted the gravy a little thicker so I stirred in corn starch and let it thicken over the last 1/2 hour. Serve over white rice w/gravy and steamed broccoli and it's the perfect meal!

Banana Sour Cream Bread

The best bread I've eaten, and I'm not really a big banana fan. It's even better when you slice & toast it the following day. Something in the bread crystalizes (banana? sugar?) and gives the bread a nice crunch. Even the serious bakers in my family have requested this recipe. Yum, yum, yum!

Broiled Tilapia Parmesan

This recipe is perfect as is. Keep to the suggested cook times and you'll have a great meal. I served this with the Spinach and Rice (Spanakorizo) recipe on this site. By itself, the rice is just okay, but the dill makes it the perfect accompaniment to the cheese & lemon coating on the tilapia.

Zucchini Yogurt Multigrain Muffins

I've been looking for ways to sneak in extra protein & vegetables into my picky toddlers diet. These did the trick! Some changes I made-- 1) replaced all flour with 1 part wheat germ & 1 part multigrain pastry flour (A trick that I learned from "The Sneaky Chef"); 2) I used pear sauce (didn't have apple on hand); 3)Omitted the honey & used 1/2 cup sugar; 4) Used sweet potato instead of carrots. This recipe made 24 mini & 12 reg size muffins.

Chicken Tikka Masala

Excellent with the following changes--1) For medium heat, omit all cayenne pepper. Believe it or not the black pepper in the marinade provides plenty of heat. 2) Choose a jalapeno pepper with a rounded tip & remove the seeds. The rounder the more mild, the more pointed the hotter the pepper. 3) Aside from a sprinkle of salt in the sauce, omit all salt. 4) If you don't want to fire up the grill, make a makeshift "grill" using a cookie rack over a foil-lined cookie sheet. Place the marinated chicken on the rack and broil on high (@ 5 min. each side) I also used thigh instead of breast meat & used olive oil instead of butter to saute the garlic & jalepeno. For easy sides, I served with basmati rice, naan, choli/garbanzo beans & raita (all from Trader Joes). Enjoy!

Slow-Cooker Pepper Steak

This recipe is yummy! The flavor is perfect, the meat is extremely tender, and it is easy to put together. My only alterations- I omitted the salt, put the green peppers in for the last 2 hours to avoid mushy texture, added extra cornstarch at the end and let it sit for another 1/2 hour. I did a slow cook for 6 hours, but it was actually done before then. I served it over japanese rice. Next time I'm tempted to add other vegetables (carrots, celery, potatoes).
