Karyn's Cream of Crab Soup

So delicious, surprisingly quick and easy, and a big hit with the family. Substituted 1c. skim for one of the cups of half n half and 1/2 cup skim for 1/2 cup of whipping cream. Followed suggestion to halve Old Bay and added more sherry. Had only 8oz of backfin crab and it was all still delicious! Next time we'll spring for the whole pound of crab if we can. Thank you, Karyn, can't wait to try some of your other recipes-I see they're well loved!

Barley Bake

Great dish with lots of uses. I added a grated carrot along with the onion, added more scallions and mushrooms and because I was concerned about the reviews that thought it was bland, I added a whole tablespoon of dried basil and used chicken broth. Served it with Chickpeas in Tomato Sauce With Feta and Wine from this site and it was very satisfying--whole family thought it was great! My tomato/mushroom hating son picked out the tomatoes but didn't even realize there were mushrooms in the bake : ). As an added bonus, the leftovers will be a good start for a soup!

Chickpeas in Tomato Sauce With Feta and Wine

My family loved this-quite a surprise that it was so satisfying without meat. I used 1 c. feta and per another's suggestion served it with the Barley Bake from this site (I added 1T basil to the bake). Next time I'll double it to make the portions of the two recipes come out even. Thank you, Jen, we'll have this again!

Nutty Apple Crisp

Yum! Comforting and so, so good! I used Cortland and Crispin apples 'cause that's what I had on hand, and left the skins on. I followed suggestions and added 1/2 c. more oats, about 1 tsp. cinnamon and 1/4 tsp. cloves, used less butter, and added 1/2 bag thawed cranberries. Wow. The sweet/tart combination was just right, not to mention the added health benefits of the nuts, cranberries and less butter (didn't miss it even with the added oats). I'll make this again--thank you, Eleanor, for posting this recipe and to all who made suggestions!
