Blueberry Buttermilk Coffeecake

This cake is amazingly good. It makes a very large cake and my 9 x 13 pan was big enough but the butter from the topping leaked onto the bottom of my oven a bit. Next time I know to either make it in 2 pans, or line the oven. The only change I made to the recipe was using semi-sweet chocolate chips instead of berries to appeal to the masses and everyone loved it. I want to try this recipe as muffins someday. Great texture all around.

Gingersnap Strips

I like the ease of rolling out the dough and slicing the cookies later, however, I found the flavor to be a bit bland and these were too soft for my taste. I was looking for a ginger *snap* cookie. I gave 3 stars because my son likes the flavor. He too, thinks they're too soft, even after trying to over bake them.

Broccoli Beef II

This was fantastic. Hub couldn't stop complimenting the dish. The only thing I did differently was threw in a handful of almonds when tossing it together. Says it serves 4, not for us. Closer to 2 if it's all we're having. It was enough to serve all 4 of us because we it alongside egg rolls and general tao chicken. This recipe has earned a spot taped to the inside of my cupboard with all our other favorites.

Garlic Shrimp Spaghetti

The family thought it was ok. The chicken broth threw off the feel of the dish, it was all we could taste. I will make it again but will use seafood stock next time.

Chocolate Cake II

This was so good. The coffee was noticeable (and I LOVE coffee) but not overpowering so even my husband and kids liked it (not coffee drinkers). I made a cream cheese frosting to go with it because there was enough chocolate for my taste just with the cake. I tried cooking it in two 9" p-ans and even though I didn't use all of the batter, one pan overflowed. SO I don't recommend doing that unless yours have high sides. I'll be buying new pans so I can make this again, next time without the oven clean up.

German-Style Weck Rolls

I've been making these for years for my family, and they're a lot of work (so they don't come often) but they're worth it! I usually add 1/2 a brick of aged sharp cheddar cheese to the dough, and then sprinkle more cheese on top after brushing with the egg wash. Cheese buns, better that the grocery store, crisp on the outside, soft on the inside.

Tomato-Topped Sole

My family is trying to more fish that isn't breaded and fried. I ended up cooking this on the stove top because my oven was on the fritz and it turned out great. Will make again and again....

Chewy Peanut Butter Chocolate Chip Cookies

As written these cookies weren't chewy or peanut buttery. After the first pan came out of the oven and I realized that, I mixed in an additional 1/2 cup of peanut butter and that did the trick. I also baked for not a second longer that 10 minutes and that helped the texture.

My Amish Friend's Caramel Corn

Simple to make. BIG hit with my husband. I used molasses because I had no corn syrup and used 1/2 butter and 1/2 margarine...I packaged it in Ziploc baggies. 1 day later, the kids tell me it's still crunchy.

Seven Grain Bread II

The first recipe I've used with my bread machine that didn't come with it and I'm in love. I was hesitant about putting honey instead of sugar because in my exeperience it really changes the taste and don't like it, but I figured I'd give it a go one more time...you can't taste the honey at all. It's soft and light in the middle, the crust isn't too dark or hard. I used 12 grain cereal mix (the kind you cook), turned out great. Will make again and again, it's better than store bought!

Oatmeal Cocoa Macaroons

I replaced the shortening in this recipe with butter, and added 1/4 cup of shortening. Also used 1 cup of coconut. They were rich and creamy, didn't last long in this house.

All-Day Apple Butter

I made two double batches of this to freeze, the kids love it on their toast in the morning (it's been 2 months and they have yet to ask for something different). I did cut back the sugar and diced the apples in a food processor to make the process quicker, and a hand mixer really made it smooth in the final step. I'll make this every year.
