Scented Applesauce-Cinnamon Ornaments

Made these and sold them during a fundraiser. Everyone asked if they were edible. Couple of hints- "flour" your board and rolling pin with extra cinnamon so it doesn't stick. I used glitter glue and a flat head tooth pick to make the holes for the mini ornaments. A skinny stirring straw could work too. I ended up baking at 220 degrees with my oven because 200 took too long. It will come off the pan when it is dry enough, if you try to scrape it off, it will crack. The middle will appear dark on the underside if it is not completely dry. Fun to do.

Kitchen Sink Cookies

substituted most of the oil with applesauce to decrease the fat content and the cookie still came out. doubled the oats and will decrease the amount of sugar to 1 3/4 C next time - a little too sweet for me with everything else in the cookie. added peanut butter to the wet mix and used a variety of chocolate chips instead of butterscotch. Will bring these to the local firehouse 9/11 to say thanks for all they do.

Kitchen Sink Cookies

substituted most of the oil with unsweetened applesauce and the cookie came out nicely. also added peanut butter to the wet mix and doubled the oats. Thumbs up from kiddos and hubby.

Tres Leches (Milk Cake)

I've not tasted a tres leche cake prior to making it- but it fit with our luncheon theme and I wanted to try it but I had to make a few modifications- it smelled really eggy after it was baked, and the topping was too sweet, so I added a second batch of plain whipped cream to the topping and a teaspoon of rum extract in addition to the vanilla, and sprinkled with cinnamon and chocolate shavings- had a co-worker say it was better than her tres leche wedding cake. It was moist without being soggy and the eggy taste wasn't apparent. cake was refridgerated overnite. would make again. update: I've made this cake 4 times and each time it's come out different. 2x the milk did not soak, with the cake being dense and not rising (though i used baking soda which was successful previously), 2 other times the cake texture was different. Brazilian Fish Stew

I was hoping to love this-but it was only so-so though my husband liked it. I used mahi mahi and had to add additional seasonings and some fish sauce to add more flavor. I may try this again and add shrimp and pump up the seasonings

Caribbean Sweet Potato Salad

made for guests and not a huge hit. had to skip the cucumber because the one I had was bitter and left out the peanuts. added mini diced mangos to try to balance out the flavors. don't plan on making this again

Chili-Lime Chicken Kabobs

this was good base recipe. made skewers out of chicken breasts sliced in half to thin it out instead of kabobs so they cooked quickly. added water because the marinade seemed too thick and I added a bit too much cayenne. added about 2 tbsp of honey to balance out the flavors and tweaked it to taste. marinated for about 5 hrs. delish. will use the stove top grill for the pieces too thin or small for the skewer.

Chicken with Peanut Curry Yogurt Sauce

This was good. as suggested, added milk to thin out the sauce. Also added additional ginger, red curry paste and red pepper flakes to the saute, and seasoned chicken with garam masala. Used greek nonfat yogurt which gave the sauce a cheese-like richness without the guilt. Would make again especially since the kids ate it too.

Sweet Potato Bread

got rave reviews. reduced the sugar to 1.5 cups and used 1.5 cups of sweet potatoes mashed but left a little chunky. put into muffin cups and was done in about 20 minutes. Will make again

Beef Fajita Marinade

made this tonite for an unplanned dinner and used a new york cut as the market didn't have flank or skirt steak. I pierced the meat with a fork as I didn't have time to marinade over nite. I used all the ingredients and added about a tablespoon of soy sauce and some olive oil. After grilling and tasting, I had to sprinkle salt over the meat to balance out the strong lime flavor. adding salt made the marinade more to our taste, and with this addition would use this recipe again.

Best Ever Blueberry Cobbler

Oh yummm. doubled the cake topping and have used both fresh and frozen berries. added cinnamon to the batter and sprinkled sugar on top after it was baked. Very easy to eat.

Warm Apple Buttermilk Custard Pie

4.5 stars. keeper. Almost like the leftover custard and topping byself more. Used the easy pie crust recipe from this site and doubled the recipe and used in a rectangular pyrex as well and came out well, but took longer to bake.

Mocha Coffee Mix

i have to give this a 3.5 stars because it seemed too bland-my husband said it tasted more like hot chocolate- so I had to add additional coffee and sugar. took the suggestion to add cinnamon which added to the fragrance. An economical gift with supplies from Costco and jars from Ikea.

Eggplant Rollatini

I can eat eggplant made this way. Even the kids ate it and liked it. I sweated it out with salt as suggested, added spinach, garlic S&P and nutmeg to the ricotta, had to make my own breadcrumbs and pasta sauce because i ran out. Kind of labor intensive though, not a great recipe for a weeknite without all the ingredients on hand premade. Probably took 1.5 hrs total for making 7 rolls. and you use more than 2 tbspn of EVOO to fry. Leftovers were good as well. had w/ brown rice. would make again for a weekend meal

Chicken Enchiladas V

an easy, forgiving recipe. Had to do it from memory (haha) as I didn't have a chance to print it up. Added milk to the soup & sour cream mixture as it seemed too thick. added green onion, a little cheddar, cumin, green chili (remembered that) and forgot the chili. The family GOBBLED it up- even the "picky, never wants to try anything new" child, and the "never can finish what's on the plate" child. Making it again tonite. I may stick with my modifications....

Barbecued Beef Brisket

cooked this overnite for about 8 hrs to have for lunch- the meat fell apart, so couldn't really slice it. Used for a sandwhich. Was a little dry. Used the "Busy day brisket rub" and the sauce recipe which was good. Will maybe try again and not have it on for as long. had a 3# brisket.

Tantalizing Turkey and Blue Cheese Meatballs

yummm, these were good. Just eyeballed the ingredients, skipped the jalapeno, used 3 stalks of green onion instead and probably more than 3 tbs gorgonzola. The cayenne gave it a perfect kick. Will make again

The Best Banana Pudding

Have made twice, the second with fat free condensed milk, fat free cool whip. It seemed sweeter than with the reg. condensed milk. Only used about 8 oz of the cool whip. Very easy to eat.
