Spicy English Seven-Layer Salad

WOW! The only change I made was that I used 1 c. light mayo and 1 c. fat free sour cream instead of 2 c. mayo for the dressing. I think I will go back for seconds now! :)

Buttermilk Syrup

Excellent! Halfed recipe. Substituted buttermilk with 1/4 c. plus 2 tbsp. milk with 1 tsp. lemon juice, let stand 5 minutes and substituted honey for the corn syrup. I am sure glad I ran out of store bought syrup today and tried this recipe.

Mom's Yummy Onion Casserole

Excellent! I did omit the butter and brown 1/2 lb. seasoned ground beef along with the onions for a complete meal in one! (I also omitted the chips, I had none and instead sprinkled bread crumbs over the cheese)

Amish Meatloaf

This was THE BEST meatloaf I have ever made. I used Ritz crackers and when I added the sauce for a topping, I sliced the loaf then as well so the sauce seeped into the meatloaf. Terrific!

Fish Roll-Ups

Honey-Garlic Glazed Meatballs

Very good! I put started the meatballs in the slowcooker in the morning then after work I made a double batch of sauce, transferred all into roaster and baked for 45 minutes.

Homemade Flour Tortillas

Very easy and so economical! I used my pasta roller to roll out very thin, then finished shaping them with a rolling pin before putting in an ungreased stainless steel pan. (I did not have cast iron) Thanks!

Anniversary Chicken I

Great recipe. I used a whole chicken, cut up, made a homemade teriyaki sauce, baked until the sauce thickened on the chicken pieces then put the ranch, cheese and bacon bits on. I broiled a few minutes at the end to brown the cheese. Will definately make again!

Polish Sloppy Joes

Great recipe. I used a 4 pound pork roast as I had no ground beef, baked it, shredded it and put it in the slowcooker for a few hours with 1 quart sauerkraut with juice, 1 cup chicken broth, 1 onion and 3 celery stalks. No bell pepper. Nice change.

Campbell's Kitchen Beef Stir-Fry

Not bad. Cooked the veggies a little first then added the beef (we like our beef medium rare) Added a little more soy sauce, used real garlic and a lot of onion. I used green pepper, celery and carrots for veggies.

Mushroom Sauce Baked Pork Chops

Good. Pork stayed moist even though I had to bake 20 minutes longer than noted because of the potatoes taking their sweet time cooking. Next time I will slice them thinner with a mandolin.

Chicken and Peas Au Gratin Casserole

Very good! I only had 2 c. milk so I used 1/2 cup water and 1/2 cup mayonaisse to make up the called for 3 cups. I think this added just the right amount of "zing".

Crab Bisque

Still not like the bisques made with real cream and butter, but a good base. I sauted 1/2 minced onion in 1/4 cup real butter first, added 1/2 tsp. cajun spice. Then I added a can of crab meat, with juice. Simmered a couple minutes, added soups, a splash of milk and a splash of white wine.
