The Best Vegetarian Chili in the World
This is an exceptional vegetarian chili that improves in flavor with each passing day. I hardly made any changes. I couldn't find vegetarian burger crumbles, so used Morningstar Farms veggie burgers, chopped up. Also, you really need to cook chili powder rather than throwing it in later -- so I sauteed it along with the other seasonings. Since I used 100% New Mexico chili powder, I augmented it with an extra tsp each of cumin and oregano (which are included in commercial chili powder). I didn't use jalapeno peppers and I cut the salt from a tablespoon to 2 tsps. I used frozen corn, too, and drained and rinsed all of the beans. This is a keeper. Thanks!

Artichoke Spinach Lasagna
I served this to guests and they ate almost all of it and then begged for the recipe. And it was so easy! You don't have to boil lasagna noodles -- just soak them in the sink in hot water for 20 minutes -- a wonderful shortcut on a hot summer day. I didn't have vegetable broth, so used chicken broth. At room temp this tastes just delicious, so would be a good thing for a potluck.

Brazilian Black Bean Stew
What a terrifically easy thing to throw together -- and it tastes like you've spent hours! Next time I might leave out the ham and double the chorizo, which really gives this a nice punch. I used a just-ripe mango. It was easy to peel and held together beautifully after cooking. Just loved the sweet/hot contrast in this delicious stew.
