Skillet Chicken and Vegetables

This was very good! I used fresh garlic and basil, olive oil mayo and roasted all veggies (except mushrooms) instead. I would easily make again, but would add some red pepper flakes for some kick.

Slow Cooker Chicken and Dumplings

My mistake to use Pillsbury; knew I would not like the taste. Next time will use Bisquick or homemade dumpling recipe. Definitely add spices, celery & other choice chopped veggies. And use chicken broth instead of water. Hubby would say 5 stars--I just love regular dumplings instead of biscuits.

Cheddar Beef Enchiladas

I have to say, I combined a couple of ideas from the enchilada section. First, I would never use the packaged taco mix; much better to use your own spice mixture. Cooked with ground turkey & scallions. Added cooled rice. Didn't have cream of chicken, so used cream of mushroom w/roasted garlic, shredded sharp & jack & half sour cream half plain yogurt. Spread soup/cheese mixture on tortilla, drop some spoonfuls of refried beans,top w/ meat mixture. Enchilada sauce over prepared tortillas & extra cheese on top. They were excellent!

Artichoke & Spinach Dip Restaurant Style

This is the bomb! Everyone whom I have served it to has asked for the recipe. Make sure to SQUEEZE the water out of the spinach. The baked garlic & alfredo are the keys! Thanks!

Oven Barbecued Beef Brisket II

This is a great recipe. As with everyone, I played with the ingredients though. The night before I rubbed the meat down with salt, pepper and paprika and then put chopped onions and garlic under and over it. I increased all ingredients so that I was sure to have plenty of sauce. I opted for a combo of chili sauce, ketchup and a bit of barbecue sauce. I also used Goodmans soup mix which isn't heavy on the dehydrated onions. It was absolutely perfect.

Apple Dumplings I

This is so yummy! I chopped the apples up though and added some sugar and cinammon to them. Watch so you don't overcook because the bottom can get hard. Don't forget the vanilla ice cream!

Anniversary Chicken I

Great dish! Skip the browning like I did, it's a waste. I used enough lite teriyaki that the chicken was sort of swimming in it. It was perfect so that there was enough juice to keep everything nice and moist. Also, added more ranch and used fresh bacon. It's still salty, so maybe low sodium bacon next time since I will definitely make again.

Garlic Ginger Chops

A great recipe for anyone who truly enjoys garlic, soy and ginger. I even used jarred ginger. Although the chops come out very moist, I would have preferred the coating not to be as moist as the meat. Next time, I will do without the bread crumbs and I think it would be awesome on the grill.
