Peruvian Arroz con Pollo

Reviewed: May 23, 2012
Amazing! I used one entire bunch of cilantro, just chopped about an inch off of the ends of the stems. The stems have great flavor that doesn't need to be discarded. My husband served a mission for our church in Peru and was very happy I learned how to make one of his favorite dishes. Thanks, Katie!

Crustless Cranberry Pie

Added zest from one orange, and replaced 3/4 tsp of the almond extract with vanilla so the almond wouldn't be overpowering. Very popular with the kids!

Koshary

Reviewed: Feb. 24, 2012
Absolutely amazing. I made plain brown rice in my rice cooker and stirred in some butter and Better than Bouillon when it was done. I also added a little Better than Bouillon to the tomato sauce. I used 1/2 teaspoon cayenne in the chickpeas so my kids wouldn't complain, and they had a gentle heat. I didn't think there were enough noodles, chickpeas, and tomato sauce to add to the lentils and rice. I would double the chickpeas and noodles, and double or even triple the tomato sauce next time. Makes a ton, but I was happy because I got to eat the leftovers for lunch all week!

Cinnamon Pear Frozen Yogurt

Reviewed: Sep. 7, 2011
Amazing! My kids went crazy over this. I used pears in their own juice and plain yogurt with 1/2 teaspoon vanilla extract. Even with those substitutions, I lowered the sugar to 1/4 cup. It was still very sweet. We don't have an ice cream maker, so we made the frozen yogurt in a bag. I filled a plastic gallon bag half full of ice and added 1/2 cup rock salt. I divided the yogurt mixture into three quart bags (I sometimes double bag to guard against leaks) and added them to the gallon bag. Then, the kids and I wrapped the bag up in a towel and tossed it around for about ten minutes. It was a fun activity for family night!

Pumpkin Chip Cupcakes

I make these muffins unfrosted because they're healthy and my kids love them. I use all whole wheat flour and replace half of the oil with applesauce. I also kick the spices up a little: 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp cloves, and 1/8 tsp ginger.

Addictive Sweet Potato Burritos

Reviewed: Feb. 4, 2011
I made this recipe a long time ago using the advice to mix the bean mixture with the sweet potatoes. I almost didn't make it again, but I had all of the ingredients on hand last night and decided to give it another try. Delicious! Keeping the sweet potatoes and the bean mixture separate made all the difference.

Naan

Reviewed: Feb. 1, 2011
I should have read the reviews that compared these with flattened, sweet dinner rolls. They aren't bad, but they are not authentic and do not taste like naan. Will not make again.

Banana-Chip Oat Muffins

Reviewed: Dec. 17, 2010
Love this recipe! The oats give the muffins a nice texture. They almost fooled me into thinking I had added chopped walnuts. I usually omit the chocolate chips (to give more focus to the banana flavor) and add 1/2 teaspoon ground cinnamon.

Cranberry Walnut Cookies

Reviewed: Jan. 29, 2010
I'm giving these 4.5 stars because I felt they were a tad too sweet. I loved everything else about them. Please use fresh cranberries! They are delicious, and the orange flavor is delightful. FYI, these cookies don't rise very much because the leavening power of the baking soda is somewhat neutralized by the cream of tartar and the refrigeration time.

Brazilian Black Bean Stew

Reviewed: Nov. 16, 2009
Delicious and different. I think people who called this bland may have used a can of diced tomatoes with mild green chile peppers instead of a can of tomatoes with hot green chile peppers. I didn't think any extra spices were necessary. But then again, I didn't try to replace the chorizo with anything--and chorizo has some wonderful spices in it. I think the amount of mango in the recipe should be increased if your mangoes are not super sweet. I used three semi-sweet-tasting mangoes, and I could have used more.

Chicken Tikka Masala

Reviewed: Jul. 23, 2009
Used a total of 1 tsp salt. Cut cayenne to 1/2 tsp and used 1/8th of a jalapeno--still spicy enough for me and my husband and a little spicier than my toddlers prefer. This is the closest we have come to replicating restaurant-style Indian food.

Lime Gelatin Salad

Reviewed: Apr. 13, 2009
I really can't believe this recipe doesn't have more reviews! It is one of the best Jell-o salad recipes I have tried--perfect to bring to a family or church gathering. It's simple to make and pleases everyone. It only needs to chill for about 15 minutes before adding the whipped topping. I used a small can of mandarin oranges and a large can of crushed pineapple because that's what I had on hand. This recipe is going into the entertaining file! Update: I sometimes replace the lime Jell-o with strawberry for a pine-orange-strawberry theme and have gotten lots of positive comments. Also, you can double this recipe (I use a four-quart glass baking dish) without doubling the cream cheese or Cool Whip. It turns out a little lighter but is just as good.

Chicken with Green Peppers in Black Bean Sauce

Reviewed: Apr. 9, 2009
Okay, the secret to toning down the saltiness of this dish is to omit the salt, chicken bouillon, and the soy sauce. Then increase the water to 1 cup. Use 1 1/2 Tablespoons (4 1/2 teaspoons) cornstarch dissolved in 1/4 cup additional water to thicken. Also, stir in 1 teaspoon sugar. Without so much salt, this is delicious.

Orange Charlotte

Reviewed: Mar. 24, 2009
I used fresh-squeezed orange juice and less cream. It was delicious. The texture was interesting, very spongy. I'm glad I tried this, but I'll probably stick with Jell-o for family functions.

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Mar. 1, 2009
I was excited to try jicama for the first time. I was disappointed in this recipe, and I think it was mostly because of the flavor of the jicama in the salsa. Now that I think about it, many reviewers mentioned that they couldn't find jicama in the store and omitted it. I think this recipe would be much better without it. The tacos were also a little dry. I will keep searching for the perfect fish taco recipe.

Authentic Louisiana Red Beans and Rice

Reviewed: Feb. 27, 2009
I didn't want to spend money on cajun seasoning at the grocery store, so I made a small batch of Emeril's "Essence" cajun seasoning: 1/2 tsp each of salt and garlic powder, 1/4 tsp each of black pepper, onion powder, cayenne pepper, dried oregano, and dried thyme. The amounts add up to 2 1/4 teaspoons of spice. I used 1 tsp as directed in the recipe. Next time I may use the entire amount. Thanks for a wonderful recipe!

Oklahoma Cheese Grits

Reviewed: Feb. 23, 2009
Too much butter, salt, and cheese. I also was not crazy about the worchestershire sauce taste. I prefer stovetop grits with a little butter, cheese (not processed), and hot sauce. However, I did enjoy the texture provided by the egg.
