Apple Crisp II

Reviewed: Oct. 27, 2011
Made this a few weeks ago and Wow, this was so good! I mean GOOOOOD!!! We like more of the crumb topping so I used a little less apple and then just used an extra 1/2 of the crumb topping ingredients. Was perfect for us! Followed everything else as written except I did NOT use the water, glad that I didn't because it came out perfect! Wish I had found this sooner in the apple season, can't wait to make again!!

Should be way more than 5 stars - great recipe that is soft, delicious, and addictive!! I cut the recipe in half but otherwise followed directly - amazing results!! Mine only needed 10 minutes in the oven!

Chicken Enchiladas II

These are addicting. I don't care if you call it enchilada, burrito, taco, or just dinner - very good recipe and you will be glad you made it! I follow the recipe exactly, except for doubling it to make more, and every time they are a hit. My husband even requested them as his birthday dinner!

Wow! These were a huge hit and will be making again soon! Followed all the breading and cooking instructions as written. I didn't want them hot since serving to my kids also, so I mixed BBQ with the butter and they came out VERY yummy!!

Hamburger Vegetable Soup

Reviewed: Dec. 30, 2010
My husband was skeptical of how this would turn out and I was very wary of the the 2 packets of dry onion soup mix....however....it was very, very delicious!! Don't be afraid to put them both in there! I followed the recipe except I did add potatoes (yum!) and since I didn't have anything frozen except corn I also added in fresh carrots and green beans that I had in the fridge along with the celery and onion the recipe calls for.

Blueberry Drop Cookies

Reviewed: Feb. 26, 2010
Although a yummy recipe and a great alternative for using some leftover blueberries, I don't agree with the muffin top comparision. The night of making them I actually wasn't overly impressed but the then next day they were so much better for some reason - I couldn't stop eating them! I took the advice of others and did half almond extract & half vanilla. My youngest didn't like them, I guess they felt they got cheated out of chocolate chips. Although my oldest would pick out blueberries and loved the cookie part.

Yikes - I know I am not the norm with how people like this but for us it was a huge bust and I am no slouch in the kitchen. Guess it just wasn't for us!

Mama's Italian Wedding Soup

Reviewed: Feb. 26, 2010
I was very excited with how this came out - I will admit, I am one of those people who made changes the first time that I made it but not on purpose!! I ended up not having the carrots and fresh spinach like I thought but had already made the meatballs so improvised with great results! I made the meatballs with fresh parsley instead of basil, added garlic powder and a little extra onion with no bread crumbs. I used about half of box of defrosted frozen spinach, celery, and since I was out of carrots I put in a can of cannellini beans so it wouldn't be too much meat. I used a bit more pasta and VOILA!! All family members approved - including my Italian hubby!

So yummy!! Simple but just perfect! The pork comes out so tender, easy to shred, and with perfect flavor. Not a hint of the root beer either!

This was AWESOME!!! It is even better cold! I did everything as written except skipped the corn because I didn't have any for some reason. Next time I may make a little bit more vinaigrette but other than that won't be changing a thing!

3-Cheese Pasta Bake

Hmm....I wish it had 3.5 stars available. There really isn't much to say - this is a very simple and predictable receipie. Nothing spectacular but it does make a nice side dish. My husband and picky toddlers liked it so will make it again. I have tried cream of broccoli and cream of mushroom. Personally I think cream of broccoli is better. Give it a try!

Beefy Chinese Dumplings

I have to admit, I am very happy with how these came out!! My family and I couldn't eat faster if we tried! They are a lot of work but you get in a routine and you are done in no time and it is well worth it!! I scaled it down a bit with just 1 lb. of ground beef, 2 cups of rainbow slaw (so I didn't have to shred), and used green onions instead of regular. I did leave the amount of seasoning the same and it was soooo GOOD!! You have to try this!!
