Chicken and Stuffing Casserole

This was great, easy and very flavorful. Served with seasoned broccoli, crusty bread and a glass of wine. Wonderful. You can leave the chicken breasts whole just adjust the cooking time.

Banana Pineapple Oatmeal Cake

I'm assuming you cook the oatmeal in the boiling water. When do you add the oatmeal to the cake - directions don't say. Only gave 1 star ... will try it and let you know.

Sweet Potato and Fruity Fritter

I thought this had a lot of flavor. I followed the recipe exactly as written. I served as a side dish for dinner with mango chicken and cuscus. It was perfect.

Salmon Hash With Potatoes & Dill

It was quite good. I was tempted to leave the mustard/ketchup out of the recipe but then I thought where would the flavor come from so I used honey mustard instead of Dijon and I was pleasantly surprised. Only had red potatoes and they were a bit too solid ... next time I'll use, as suggested, a more starchy potato other than that I was pleasantly pleased.

Chicken Scampi I

This is a really good recipe and a great way to stretch some boneless chicken breast. I made a few changes after reading the other reviews. I didn't have time to marinate for more than 15 minutes but that was sufficient to flavor the sliced chicken breast. I reduced the Worcestershire Sauce to only about a teaspoon,added some(about 1/4 c) chicken stock and thickened the sauce with some butter. Put the chicken back into the sauce to warm it before tossing with the pasta. Served with some warm crusty bread and a green salad. Absolutely Delicious! It's a real keeper!

Ham and Asparagus Strata

Flavor was good but too many ingredients on top of stuffing mix that the egg mixture didn't make it all the way through. Bottom was dry and ended up very dark but not quite burnt. It was a great way to use leftover ham but the recipe needs some work.

Beef Enchiladas II

I used some taco seasoning in the meat mixture which added a bit more spice to the dish. I also used canned enchilada sauce because I couldn't find a mix. Then I served with sour cream and a side dish of Red Beans and Rice.
