Chicken Crunch

I scaled this down for two adults but made some changes along the way. I used two chicken breasts and used a smaller baking dish than recommended. To cut down on the richness, I used only about 2 oz of sour cream. I added garlic salt and pepper. I put in chopped up carrots, celery and some canned potatos I had. This was delicious! Thank you for sharing! Definitely reminiscent of chicken pot pie!

Jay's Jerk Chicken

This recipe is awesome! I marinated for a full 24 hours with one habanero. WOW! I sliced it after grilling and put it in a tortilla with a little cheese and habanero hot sauce! YUM! If you decide to use a habanero, wear gloves as this stuff can really burn your skin.

Wisconsin Cheese Soup I

I added extra veggies to compensate for the ham and peppers that I chose not to use. Also had to cut way down on the cayenne pepper as it has a tendancy to be overpowering. This is a delicious recipe!

Pico de Gallo Chicken Quesadillas

I skipped over the part in making the sauce and used a medium garlic salsa instead; it saved me a lot of time. I made some with chicken and some with shrimp and my husband was most impressed! I think the key to making the quesadilla stay together in the skillet is to keep the insides small and compact. I cut the food into very small pieces and everything stayed inside. I also cooked very evenly over a gas flame. Thanks for sharing!

Potato Pancakes I

Absolutely delicious! I let the potatos get brown and crispy. I served with sour cream. We had a couple left over for the next day. I reheated them in the toaster oven for a while and they were still fabulous! Thanks for sharing this recipe.

Eggplant Parmesan I

My first attempt at making eggplant and it was very tasty. Next time I will leave out the ricotta cheese. Although I love ricotta cheese, I think it made this dish too heavy. Thanks for sharing this recipe!

Soft and Chewy Peanut Butter Cookies

I struggled with the baking part of this recipe. When I put the dough on the sheet and used the fork, I felt I had plenty of room for the cookies to expand. All the cookies ran together and since I had used the fork for the lines, the cookies were too crisp. I opted for a tiny muffin pan and filled them about 1/2 way. I cooked on 300 (convection) for 20 minutes and they came out much better. Tasty, just frustrating.
