Tortellini Pesto Salad

Took others advice, left out the clove of garlic, added just enough milk to make it mix well. Chopped the red pepper into 1/4 inch chunks and use leftover cooked broccoli. I thought it was great with last night's cold cheese tortellini, but the family was less enthusiastic (probably because I'm the only Pesto lover). Fresh basil leaves add nice color too.

Amazing Tofu Scramble

I used chopped, canned mushrooms (yes, sacrilege, but our vegetarian doesn't like mushrooms), and left out the pepper. Added 1/4 c. chopped parsley for color and served it for dinner. I thought it was a great use for tofu that hadn't survived compression in a pretty block for slicing. It was a side dish for the rest of us with fish. GREAT!

Peach and Escarole Salad

Loved it, but all escarole was a bit much. I did 1/2 spring mix. Toasted pecans worked too. Great summer salad, and beautiful!

Shrimp Scampi Bake

Tasty. Used 1/4 of the butter and it was still greasy. Will add white wine next time, and add more fresh parsley on top. BTW I just threw leftover noodles in my covered fry pan, heated for 4 minutes and stirred. Great as a follow-up to the spaghetti 2 nights earlier!

Sweet and Spicy Sweet Potatoes

Excellent - I cooked in foil packet on a grill - they came out perfectly cooked along side Christine's Turkey Tenderloins from this site. 1/2 recipe, with one large garnet yam, fed 3 adults as a side dish. Add something green (we did steamed green beans) and you have a great look for an early spring BBQ.

Turkey Tenderloins

I grilled these - was surprised how moist they ended up being for a no-oil recipe. Made them with Sweet and Spicy Sweet Potatoes, cooked in foil packets on the same grill. They were perfectly cooked at the same time the meat was done. Make sure to pull the meat off the grill a bit early, as the tenderloins will continue to cook as they rest. Excellent change to the BBQ routine!

Delicious Chickpea Curry

No yams or pears in the house, so I made it with an apple and cut the recipe in half. Due to other reviews, I cut the cayenne in 1/4 and it was plenty spicy for a Midwestern palate. Looked great and tasted better.

Raspberry Pie II

FANTASTIC! Even with store-bought crusts and Sam's Club berries on special, this was an amazing pie. We kept sugar a bit low, but otherwise did this exactly as written. Wonderful!

Tina's Halloween Quesadillas

Carmelized a small chopped onion, and added between 1/8 and 1/4 tsp of cinnamon along with cumin and a sprinkle of cayenne. We didn't need the salsa, and used multigrain tortillas. Great for the vegetarians among us!

Sloppy Joe Pockets

My son said "home-made Hot Pockets!" We made with Grand Buttermilk biscuits - nice sized "pockets" when rolled out. Next time we'll add some italian seasoning and mozarella. Very easy and nice to look at! Incidentally, it's easy to make a Vegetarian version with Boca crumbles.

Hearty Baked Rigatoni

excellent - - didn't have heavy cream, so used 1/4 cup skim milk and 1/4 cup light sour cream. Added extra Italian seasoning. Could have added a bit more moisture. Even the meat eaters loved it.

Bread Machine Pizza Dough

I order this every time I'm in Chicago, but haven't found it served anywhere else. This is almost EXACTLY what I was looking for! I made a bread machine pizza dough recipe (1/2 whole wheat - no one could tell) and the dough amount was perfect for 2 crusts in a spring form pan. I added a full cup of riccotta cheese - too much. I added a clove of garlic to the spinach as well. Next time I'll use only 1/2 c. ricotta (which gives a nice lift) and add in another 1/2 c. mozzerella to the spinach mixture. I think we'll have the perfect Chicago pizza then!

Eat Michigan Salad

Easy, tasted great, as long as you don't mind a bit of sweetness. I used romaine as well as butter, and it lasted longer with dressing on it. I only needed 1/2 recipe of dressing to serve a big salad for 10.
