Spinach Lasagna III

This had to be one the best recipes for lasagna I've ever tried let alone made. The only changes I made to this was I added an additional clove of minced garlic, substituted 1 cup ricotta for cream cheese, and used baby portabellas as my mushroom of choice. I had my family over and they are meat lovers but opened their eyes with this recipe! I will make it a point to keep this one in my personal recipe stash.

Spanish-Style Quinoa

My sister and I really enjoy this recipe. The only thing I do differently is add less liquid as the first time around it was a little too mushy and we add more spices. This recipe is a keeper and will be making many times this new year.

Quick Tuna Casserole

I was pleasantly surprised. I think next time I'll cut the cream of mush in half but overall it was a good recipe. My fiance' was skeptical but once he tried it he was a believer. I didn't have French fried onions (not a fan of them) so I used panko and put in the oven just instill the top started getting golden.

Snickerdoodles I

These cookies were a hit! They turned out great and this was my first time ever making snickerdoodles. I didn't have any cream of tartar so I used baking powder instead. I also used the butter flavored shortening which I think added a nice flavor. My sister raved about how good they were and it's hard to get a compliment out of her. :)

Guam Fried Rice

The way your fried rice turns out really depends on what kind of rice you are using. I try to stay away from the long grain or Jasmine rice when making this. I also like using left overs such has ham after the holidays.

Pumpkin Cake Roll

Pumpkin roll turned out great! My cake did crack but I'm sure with a little practice I'll perfect it. The only thing I did differently was use pumpking pie spice and cinnamon then added 1/2 teaspoon of vanilla extract into the batter.

Kelaguen Chicken

If you live near an Asian market try to find Yours brand lemon powder, it makes all the difference. If you want your kalguen dry then sprinkle it in powder form, if you want the kelaguen more on the wet side then mix the lemon powder in water then combine with the other indgredients.

Peanut Butter and Pumpkin Dog Treats

The dogs loved them. I did add more peanut butter than the recipe called for. I also used beef broth and some bacon fat to make it extra tasty. I recommend this recipe to all pet parents who want to do something special for their canine friends.

Spinach Dip I

This recipe is great, I did alter it some but only to my personal tastes. I used the Knorr brand vegetable soup mix, added about 1 teaspoon ground black pepper, a dash of cayenne pepper, 6 ounces of chopped water chestnuts, and 3 green onions sliced thin. It was a hit at my work potluck and they are now asking that it be my signature dish.

Pumpkin Chocolate Chip Cookies III

I was really happy with the way my cookies turned out. I pretty much stayed true to the recipe with the exception of the cinnamon. Instead of 2 teaspoons of cinnamon I opted to use 1 teaspoon of pumpkin pie spice as to not over power the pumpkin taste. I am used to a more dense but still "cake" like texture and that would be my only complaint and which is why I didn't give it the full 5 stars. I can make well over a dozen for less than it costs to buy a dozen from Ralphs which is the only place I've found in San Diego that sells these babies year around. Thank you Jennifer for a great recipe that I will be using as a foundation for my pursuit of the denser textured Ralphs version.

Creamy Pesto Shrimp

I took the advice of other readers and omitted the butter completely. We used half and half instead and made sure to let it simmer longer. We also added some garlic and red pepper flakes. This was a hit and we will be making this again. Thank you for sharing this recipe although we did not follow the directions to a "t".

Honey Garlic Vinaigrette

Awesome dressing recipe! I did make some changes to the recipe though. Instead of vegetable oil I used EVOO, I also used a mix of Apple cider and rice wine vinegar (2 parts apple cider to 1 part rice wine). Finally added some fresh ground black pepper (couple grinds). I was amazed on how simple and delicious this turned out!

Beth's Spicy Oatmeal Raisin Cookies

This is a keeper! I did make some changes out of necessity such as using pumpkin pie spice in place of the cinnamon and cloves and added 8 oz of chocolate chips because they were there. The cookies turned out moist and flavorful. This will be the only recipe I use when I need to make oatmeal raisin cookies. Thank you Beth!

Robin's Quinoa with Mushrooms and Spinach

This was a very good quinoa recipe. Instead of using chicken broth I opted for vegetable stock. I also switched out the spinach with kale and added asparagus. I also used feta since I had that on hand. It came out very well but I did think it was missing something. I'm going to continue to tweak this recipe.

Arrabbiata Sauce

This is a great sauce as is, I didn't have lemon juice or parsley so I just made do with what I did have. It is inexpensive and really tasty. It is pretty spicy so if you are not that into the heat, maybe cut it down to 1/2 teaspoon of red pepper flakes. I used this as the sauce for my seafood spaghetti and it was fantastic. I will be making this one again.

Fancy Potatoes

I took the advice of other readers and cut the cream cheese in half as well as mix the cheddar in the mixture instead of entirely on top. I also used garlic powder, salt, and fresh black pepper to add more flavor. Everyone liked it and it was still nice and creamy the next day. I will make this again in lieu of traditional mash.

Janet's Rich Banana Bread

*Updated rating 11/28* Made this recipe again but this time I stuck more to the original recipe as it is presented here. Changes I made - I mashed up three medium sized bananas and used 1/2 cup of white sugar and 1/2 cup of brown sugar instead of the 1 cup of white, and did not add the walnuts. This version was more true to the posted recipe and still turned out very good. I love how moist this bread is and everyone who tries it absolutely loves it. If you are looking for an easy recipe this one is it. Original Rating: Followed recipe with the exception of mashing my bananas (used 4),, and added 1/4 teaspoon of cinnamon and 1/8 teaspoon of nutmeg. It turned out super moist and yummy. This recipe is a keeper!
