Refried Beans Without the Refry

Great recipe overall, I substituted 3/4 of the water with chicken stock and doubled the onion and garlic. I also added two bay leaves. I didn't add salt until the beans were pretty much cooked and even with that I used probably 1 teaspoon of salt as the chicken stock has salt in it as well. This recipe is a keeper and will no longer be buying refried beans in a can. This is a tasty alternative.

Super Sausage Gravy

Great recipe! Next time I'm going to use more milk and flour as this was pretty meaty but the flavor is great. I added some pepper and herbs but otherwise kept to the recipe. Loved it!

Tomato-Cream Sauce for Pasta

This is a great base for an amazing sauce. I made my own changes such as using twice as much garlic, adding celery with the garlic and onions, as well as adding some red wine and beer into the red sauce. Once I felt it cooked down I used my hand blender to smooth it out then added the butter and half and half instead of heavy cream. To finsih it off I added shavings of parmigiano reggiano. This recipe is a keeper!

Good Old Fashioned Pancakes

My fiancee' is on a low sodium diet so using box pancake mixes is no longer an option. I have been wanting to make pancakes from scratch and thought this would be an easy and yummy recipe. I added 1 teaspoon of vanilla to the mixture but kept the rest of the ingredients the same. This was super easy to make and although I did come across having the batter too thick, I just added more milk (another 1/2 or so) and it still turned out great. Next time I am going to make sure all my wet ingredients are room temperature to see if it makes a difference based on the same measurements. Very happy with this recipe though and it is definite keeper.

Perfect Pumpkin Pie

The title says it all, this is the "perfect pumpkin pie". I made pumpkin pie last year using the pumpkin pie mix in a can and was very disappointed. This recipe however gave me hope and everyone who tried it loved it. This recipe is a keeper and I will be making it again and again years to come. The only additions I made to the recipe was that I added a tad bit more spices and added a teaspoon of vanilla extract.

Cornbread Sausage Stuffing

I gave this recipe 4 stars a while back and am still happy with this recipe. I follow the recipe pretty much to the "T" with the exception of additional seasonings to my taste. If you are going to use Stove Top I advise against using broth or additional seasoning as it can turn out a little too salty. My family loves this recipe and I will continue to make it for years to come.

Downeast Maine Pumpkin Bread

This was amazing and I couldn't beleive how moist and yummy it was. The only change I made was instead of 1 cup oil I used 1/2 cup oil and 1/2 melted butter and increased the ground ginger to a little under 1/2 teaspoon. My BF and I almost finished one loaf ourselves it was so good! This recipe is a keeper and I can't wait to make another batch! :)

Spinach Lasagna III

This had to be one the best recipes for lasagna I've ever tried let alone made. The only changes I made to this was I added an additional clove of minced garlic, substituted 1 cup ricotta for cream cheese, and used baby portabellas as my mushroom of choice. I had my family over and they are meat lovers but opened their eyes with this recipe! I will make it a point to keep this one in my personal recipe stash.

Kelaguen Chicken

If you live near an Asian market try to find Yours brand lemon powder, it makes all the difference. If you want your kalguen dry then sprinkle it in powder form, if you want the kelaguen more on the wet side then mix the lemon powder in water then combine with the other indgredients.

Guam Fried Rice

The way your fried rice turns out really depends on what kind of rice you are using. I try to stay away from the long grain or Jasmine rice when making this. I also like using left overs such has ham after the holidays.

One Bowl Chocolate Cake III

I made the cake yesterday for my cousin's birthday and it was a hit! It was so moist! When I was making it I was a little scared after I added the boiling water but it turned out great! I will never make a chocolate cake from the box again.
