Slow Cooker Carnitas

I didn't have bay leaves so I skipped them. We made carnitas tacos one night and the next morning I mixed some left over meat with eggs and made a scramble, then tonight missed with bbq sauce and made pulled pork style sandwiches for an easy meal! This was super versatile and made for several days of easy meals!

really good with all the extras! I added red bell peppers, onion, garlic, and basil. I also used whipped cream cheese and it made a nice light sauce.. i will make this again!!

Fiery Pork Skewers

Yummy! I used a little balsamic vinegar since I didnt have any red wine vinegar. I BBQ'd the pork, it was delish! Served with rice and veggies, added sauce over the veggies too.. soo good! I will definitely make again.. even the kids loved it.. NO Peppers for he kids tho!!

The Best Meatballs You'll Ever Have

My husband agrees, best meatballs! I made these for my husband and sons (I dont eat beef). They love them! I put them in pita pockets with mozzarella cheese on them and it was a hit!! Smelled delish too!!

Lighter Banana Muffins

These turned out really well. I find them a tiny bit bland, but my kids really love them and to me that's more important! I added applesauce and used 1/2 brown sugar instead of white. I added a bunch of cinnamon too. My boys love them and they make a great quick healthy snack! I make them often!

Southwestern Turkey Casserole

I used some taco seasoning and ground turkey and added a can of black beans. Kids loved it. Made it the day before and it kept well overnight in the fridge. Easy and tasty. Will def make again!!

Sweet and Sour Smoked Sausage

My kids loved this and for that it gets 5 stars! I made everything is separate pots and pans so people could take what they like. I am vegetarian so I made a veggie sausage for myself. I also added little mini corns for the kids because they love them and think they are fun. My husband added the cayenne pepper and chili sauce.. easy and delish.. will def make again!

The Best Banana Bread

Very Good! Used Applesauce instead of butter, 1/2 brown sugar, 1/2 splenda and as someone else suggusted a bit of tasty rum! Very good! Kids and husband love it and its guilt free with no butter and splenda!!

Turkey Bow Tie Skillet

I used tri color spiral noodles because it is what I had at the time. The family liked it and my "picky" eater took him time and ate it all..I was suprised, usually he picks out every little thing to ask what it is..but he liked this! I made some bread sticks with leftover pizza dough to go with. Filling dinner that was pretty quick and super easy!

Lentil Chili

We all really liked this! I used 1 cup lentils and 1 cup lentils mixed wth wild rice. Also chopped the onion with a yellow bell pepper.. Super healthy and filling!! Will def. make again soon!!

Korean BBQ Short Ribs (Gal-Bi)

I used ribs in the crock pot. Even tho they all fell off the bone everyone LOVED them. The kids actually fought over the last of the meat..will have to make a lot more next time. I made rice to go with. Put in pineapple juice as someone recommended. Let cook on low from 9:30 to 3, then on Keep warm til we ate at 5. Next time I will use boneless and make a lot more!!! My 4yr old son is still crying for more meat!!

Deviled Eggs

These were delish! I made 2 dozen and people wanted more!! Followed recipes exactly, really really good! **Edit** just made for the second Easter in a row.. so good!! I put all the ingredients in the VitaMix to make into a fluffy filling and piped into the egg halves..looks really good!

Herb Roasted Pork

This turned out absolutely wonderful. My husband and brother were in love! I used balsamic vinegar but other than that followed the recipe. I don't eat pork, but everyone who tried this loved it..even the kids!

Pizza Dough II

absolutely delicious! Super easy! I added grilled chicken, red, yellow and orange peppers, black beans and cheese! Sooo good! Edit: Put on the bbq for a crispy crust.. let half cook, flip, add toppings and close for a few mins.. the best pizza ever!!
