Kim's Macaroni Salad

We love this recipe and use it all of the time. We prefer it without the jalapenos and add a grated carrot instead, which is more like the plate lunch mac salad we get in Hawaii.

We just threw this one together for dinner on the stove top, not the crock pot. I took the advice of previous reviews and cut back the sugar. As one who lives in Hawaii, I know that adding pineapple to a recipe makes it "Hawaiian" in the eyes of some cooks. But what Hawaiian really means (tongue in cheek) is "serve over rice." This recipe was excellent over rice! It took up all the extra fluids. And yes, Hawaiians eat rice with everything, breakfast, lunch and dinner!

Mulligatawny Soup I

Delicious! Loved it! Didn't have the cream so I used milk mixed with some dry milk to make it richer. It worked great. If I had been thinking, I would have used the coconut milk as another review had said. We are definitely adding this to our family cookbook!!

Great Mac and Cheese

Love, love, love this! Have not purchased a single Kraft box since making this! We are now making it once, sometimes twice a week. It is way better than any box Mac & Cheese and doesn't take that much longer to prepare. I also like how you don't have to drain the macaroni. I like to use 1 cup cheddar, 1/2 cup mozzarella. I made it one time and ran out of cheese and added cream cheese--also very yummy! Also works great using rice milk.

Thai Chicken Tenders

My family loved this, even the kiddos ate it! We didn't have hoisin sauce but found a recipe online that worked great! Next time I'll get "real" hoisin to see if it is any better!

Bacon Cheeseburger Rice

Really good! I left the bacon and pickles as a side topping to be added at the table. Glad I did, as I didn't personally care for the pickles. I already had cooked rice in fridge so I reduced the water to about 1/3 cup and added 2 cups cooked rice, let it 'steam' for 5 minutes on top. Mix. Perfect. This was just what I was looking for tonight: nothing TexMex and nothing with cream of ... soup. Thanks!

Mom's Fried Fish

This was just I needed! Easy, easy, easy! I used mahi mahi-it turned out great. I made the tartar sauce with 1 tsp of sugar. My husband loved it!

Ground Beef 'n' Biscuits

Pretty good! I didn't have refrigerator biscuits, so I made my own. I also added the extra worchestershire and chili powder as noted in another review. I also forgot to top with cheese, my kids added it at the table.

Megan's Granola

We have made this several times and love it! Like everyone else, we've made a few little adjustments, but the basic elements of this recipe are great! I use 1/8 cup real maple syrup, take out the sunflower seeds and use a mix of rolled and instant oats to vary the texture. I also leave the dried fruit out, to be added later depending on the taste buds of the eater.

Oat Bran Muffins

Excellent! I used 1/2 whole wheat/white flour and added 2 Tb honey since we wanted it a bit sweeter. My husband said they tasted "suspiciously healthy" but my kids gobbled them up and wanted more!
