Artichoke Chicken

Reviewed: Feb. 12, 2014
Excellent. I followed others advice and used half sour cream and half mayo. We only cooked one piece of chicken so we adjusted the recipe as such, but it was fantastic!

Japanese Beef Stir-Fry

Reviewed: Apr. 3, 2012
Not a big stir fry fan" but had a record Bok Choy crop coming out of the garden so decided to give it a try. Hubby and daughter love stir fry! WOW! I loved it! I cut recipe down to 4 servings as there are only 3 in the family. We ate it and the daughter finished the leftovers the next day. The crew did have one comment other then, WOW! Next time, don't half the recipe. We need more leftovers!

Lemon Thyme Chicken Tenders

Reviewed: Mar. 19, 2012
Excellant! Reduced calculted recipe to "two" Used one large boneless chicken breast for three people. Pounded it out for even cooking. Did not have fresh lemon juice so used bottled and increased the "calulated garlic" to one whole clove and then marintaed for about 30 mins. while I prepared rest of dinner. Fantastic! Served with roasted root veggies and steamed brussel sprouts, all fresh from the garden. Nothing better!

Roasted Kohlrabi

Reviewed: Nov. 26, 2011
Planted in the garden with no clear idea as to what/how to cook. Tried this recipe and was quite pleased. Only cooked one to try it out and forgot to add the cheese. But,#1 Hubby and I decided it is a keeper. Will pull another one tomorrow night and try again with the cheese and perhaps another herb or two.

German Brotchen Rolls

Reviewed: Oct. 29, 2011
Not being a baker by any stretch of the imagation and having failed at a "Sourdough Bread" attempt last night that should have been sold to the the "Defense Department, I decided to give this a try. I lived in Germany for about seven years and recently found a very good german grocey that had homemade brotchen that was hot out of the oven. Only problem, an hour away. Now I have to have! So, I started early today and spent a long time carefully reading, re-reading, measuring, re-measuring, etc. Then when I got to the first punch down got scared as it seemed to wet! So had an emergency phone call to my sister-in-law who can bake a combat boot with two tours and make it taste good. Although she was not quite sure what a Brotchen was, she said "hold steady". I followed recipe to the "T". They do not look like brotchen but then again I have trouble just drawing a straight line. But.... they tasted like "BROTCHEN"! OMG! I am so excited... Hubby just said, want a brick oven, new blender? You name it, you got it. I want more of these! Tomorrows breakfast will be Brotchen, liverwrust, butter and cheese just like a German breakfast in a Guesthouse. Now I want to go back to Germany! Thank you for this recipe and thank you for my success! FYI, if anyone sees an Sourdough loaf come flying by, it is probably mine! LOL!

Best Egg Rolls

Reviewed: Oct. 27, 2011
Made these today. I followed reviewers advice and doubled garlic, ginger and added soy sauce. I cooked pork with garlic and set aside. Cooked the carrots, cabbage, ginger and soy sauce in a couple of tablespoons of water until just wilted. Mixed all together and wrapped in eggroll wrappers then dropped into deep fryer with peanut oil. I halfed the recipe and one package of 30 ea eggroll wrappers was exactly right, right to the last wrapper. I didnot try them, not a big eggroll fan, but my daughter, who loves them and I made them for her, jumped right in and gave them 5 stars right off the bat.

Traditional Osso Buco

Reviewed: Oct. 17, 2011
WOW! Never had this dish before but decided to give it a try. I followed the recipe pretty much to the tee. I did salt/pepper before the flour. I used a deep dish castiron with a lid and then put it on the oven. I cooked bacon and used the grease from the bacon along with some butter for the fat. I was having a craving for a BLT, thus the bacon fat! Cooked it for about 2 hours and then shut off and left on the stove to cool. Was going to put into the refrig for overnight and eat tomorrow night. Had leftover salmon scheduled for tonight. Hubby came home, took one smell and decided he needed this for dinner. Added two tsps of tomato paste to thicken the gravy a tad bit, put back in the oven for about 45 min and served with garlic roasted mashed potatoes. I am very impressed with this and my ability to pull it off! Hubby loved it and decided that salmon leftovers will be going for his lunch tomorrow and he wants "Osso Buco" leftovers for dinner tomorrow night. His only suggestions for improvement! Double the recipe so he can have it for lunch the next day and leftovers the next night! That is the ultimate compliment! Deserves more then five stars! Very easy to prepare and simple household ingredents that are usually available in every kitchen!

Easy Homemade Beef and Ricotta Ravioli

Reviewed: Jul. 11, 2011
I have rated this once before and this still gets five stars. But, having done this once again. And having followed the recipe I ran into the same problem the second time. I followed recipe to the tee. I used Nasoya All Natural Won Ton Wrappers 12 oz for my wrappers! As the recipe is stated, I used exactly 3 ea 12 oz packages of the wrappers. So, plan accordingly. I had to make an extra trip to the store mid-way though. They are still excellant and I will continue to make them. Back to the store tomorrow for more wrappers as tomorrow will be making them with spinach. I take a few days a month for cooking for freezer storage so I can be a lazy cook when I want too.

Excellant. As stated by other reviewers, I used 1/3 cup olive oil and 1/4 cup Balsmic Vineger. Did not have any sage. Used fresh Rosemary and Thyme and dryed Parsley. It was very tasty. Served with roasted garlic mashed potatoes and avocodes.

Calzone

Reviewed: Jun. 7, 2011
I am giving this 5 Stars, but I did make some beginner mistakes so I thought I would list my mistakes to help others. First, I follow recipes exactly and think it would have been great. But... I told the hubby what I was putting on it and he said great. Rolled out the dough, put on the sauce, cheeze, pepperoni, olives. Then, he says, hey I want sauteed mushrooms! So, sauteed mushrooms are prepared and added to the prepared calzone. But wait, we are not done, now he wants bacon. So bacon is added. Now, the sauce has run and needs to be dabbed up with paper towels and the dough has risen. So I wrapped and baked. It turned out good, but much larged then any calzone I have every seen. LOL! I am still giving it 5 stars though. Will definately make again, will just make sure "ALL" ingrediants are ready before assembly and once assembly begins, no additions allowed!

Chicken Quesadillas

Reviewed: Mar. 15, 2011
Skipped the bacon bits. Used chicken tenderloins with fajita seasoning in a frying pan with olive oil for a few mins. Added green and red peppers and then onion. Folded ingredients into a wheat tortilla and added chedder cheese and black olives. Folded in half, and cooked on a George Forman. Served with Salsa and Guacomola Sauce. Excellant!

Baked Slow Cooker Chicken

Reviewed: Mar. 7, 2011
This was very good. I put chopped carrots in the bottom instead of the foil. I had 9 lbs I had pulled out of the garden so figured I would give it a try to see how they would taste. I then seasoned with oil olive spray, tucked fresh thyme under the skin and in the cavity, squirted fresh lemon juice over the top and stuck some lemon pieces in the cavity then some salt & pepper. Added about a half a cup of chicken broth. On high for one hour and low for about 6 hours and then warm until dinner. It was very moist and cooked perfect. But, there was ALOT of liquid. I made some gravy and served it with home grown yukon gold taters fresh from the garden and the carrots. The chicken was great, the taters were great. The carrots, just tasted odd. My 21 year old daughter said they tasted like Fruit Loops! LOL! I guess the lemon and the carrots didn't work together.
