Tweaked a few ingredients though...I added one jar of Gerbers Banana baby food I KID YOU NOT! they are perfect for banana bread because they are ripe and pureed..it made my bread so soft and moist (I was able to reduce the butter content by almost half because of this step. As well used half butter half shortening. Used half brown sugar half splenda/sugar mixture. Added 1/2 tsp extra salt to accentuate the buttery taste without having to add extra butter. Excellent recipe!
