Sweet Potato Butternut Squash Pie

made a double batch and froze half. Made the 2nd today and threw it in the blender. Was much better. Didnt change a thing minus omitting the marshmallows and my family loved that this healthy dessert. The sweet potatoes are all the sugar you need and I dont feel guilty letting my 18 month old eat it up. Will make again. Perfect with homemade whipped cream.

Slow Cooker Chicken Taco Soup

My large family adores this recipe. I love how crazy simple it is. I use a 16 oz jar of salsa in place of the diced tomatoes w chilies. I have always used broth in place of the beer as I never have one around. But this is the easiest thing ever. I throw in the cans of beans and all the other stuff onto the crock pot w frozen chicken breast filets and by the end of the cycle that chicken is just falling apart and perfect to shred up into the soup. On the rare day there are leftover, they reheat very well.

Tangy Shrimp and Scallops

So yummy! I used cheap frozen shrimp and they were even great. I havent tried the scallops but seeing as they get less than favorable reviews I may skip it altogether. I did this late one afternoon and by the time DH was home and grilled them they had marinated for hours and they were so delish! Pair it with some cous cous and broccoli and zucchini and a light white zin and you have a fine meal fit for even the most refined tastes. WOuld make a great horsedoeurevs as well. Enjoy!

Flavorful Chicken Rolls

I made this for a cooking competition at my husbands job and took 1st place. I put some of the 'quick and easy alfredo' (also allrecipes) and it was amazing. The first time I made this my whole family; including my 18 month old and 6 year old; were just totally in a food euphoria. My son asks for it every night! And he is picky. I have us fresh and frozen spinach and i like te frozen just as well and the convenience makes it easier. Ran into a lack of feta one night and I will tell you that was a bummer. You must have it! it is bland and dull without it. I use reduced fat feta, reduced fat cream cheese, turkey bacon, skim milk and whole wheat bread crumbs that I season and the results are great. I am so glad I ran across this recipe as it now graces our dinner tabe 1 night a week now.

Chicken Linguine a la Me

I substituted all over this recipe. We used whole grain shells instead of linguine, whole wheat flour vs. regular bleached, no broccolli, no onions, and extra cheese. The family loved it. even my insanely fussy 5 year old dove right in. Next time I might lay off the garlic a bit but otherwise it was great. Like chicken mac n cheese. Score one for moms with picky eaters!

Fried Chicken with Creamy Gravy

I skipped the gravy and added a bit more of the suggested seasonings as I love flavorful fried chicken. This is now a part of our weekly menu as my husband and picky 4 year old love this chicken. It is super moist and if you cut your chicken into smaller bits it cooks really fast and you end up with a homemade chicken nugget. I think this is a great simple tasty recipe. What more can you ask for?

World's Best Lasagna

we have used canned sauce for lasagna for years but I was in charge of food for a pre-wedding dinner and opted to go from scratch. I'm really glad I did. I doubled the recipe to have enough for 12 safely if everyone had seconds. Several did and we still had about 6 peices left over. But we didnt mind. Not only was I able to ensure that the meal was gluten free. (for the groom) But it was so much better. I used fresh basil vs dried and added more than called for. We love basil. And I dont think it was too much. The crowd was so impressed that the whole thing was from scratch, too. I usually cook this was but lasagna is so time consuming anyhow that I skip the sauce. One alteration that I made (as is a traditional family thing) was I boiled 6-8 eggs to hard boiled, mashed them up and mixed them into the ricotta mixture. It bulks that layer and adds a nice flavor. It is just how we have always done it. It feels incomplete without it. Anyhow, great recipe, great meal and great memory.

Fortune Cookies I

I have never considered making fortune cookies but decided it would be a fun way to announce our coming addition. So I braved the looming possible results and after I realized that you fold them with the underside in, they turned out great. Also, I took the advice of other reviewers and added a small amount of water to get a pancake batter consistency. Worked out awesome! I will put them back into the muffin pan to crisp if they don't on there own by saturday. Also, if you like your cookies with both ends touching like I do, use the first couple of open ended oops ones and when you get the latter ones folded put the ends into the open ended cookies to keep them together until the harden enough to set in their own. But super excited it worked and also to see the reaction of our family at the restaurant.

Grilled Salmon II

If we have salmon, we have it like this. There is nothing better than this. We make it exactly like the recipe states and even ppl who 'dont like fish' enjoy this marinated version. Thanks for a great recipe to set our salmon apart.

Beef Stroganoff III

We have eaten stroganoff for years but it was always the package seasoned kind. We found out that the kids cant have anything artificial or with preservatives so there was a long time that we didnt eat any. When we found this recipe and tried it the were so excited they each ate 2 and 3 bowls! I was afraid the wine would make it so tangy for them but they didnt even notice. And bonus, no behavioral problems from the nasty packaged garbage!

Master Pizza Dough

I have used this many times with consistent results. I love yeast dough and love not waiting for it to rise twice even more. The right amount of sweetness to use for a calzone and ideally flavored for breadsticks with a hint of rosemary. Perfect for our family, Thanks!

Banana Banana Bread

I like dense banana bread. Altho I did substitute half the butter with vanilla yogurt and added cinnamon, nutmeg and cloves. It was really yummy. Likely would have been good without the seasonings but I like a bit of spice. I used a 8x4.5 bread pan so I got a loaf and a half. I just used the leftover dough and made hot fresh muffins when we had a slow morning a couple days later. They were gone pretty fast. My 4 year od picky boy ate it up and asked for more. even with the pecan bits in it. I recommend this if you like a heavy, flavorful recipe and have 6 or so overripe bananas. Mmmmm.

German Chocolate Cake Frosting II

I made this exactly as written and it turned out great. It was not thickening and I read through the reviews here and rather than mess with thickening agents, I upped the heat as others advised. It worked like a charm. I think I will use half brown and half white sugar next time to add some depth to the flavor but my kids were trying to talk me in to letting them have a small bowl of it to eat like pudding. I made 3-8" cakes and put 1 cup of this on each layer and frosted the outside with a thick chocolate cake as some mentioned it not sticking on the sides of cakes well. I didnt dam the edges but had little ooze issues. We havent cut and eaten this cake yet as it is for our 11th anniversary tomorrow night, but it looks amazing, tastes great alone and was a total sucess. Thanks for a great recipe.

Honey Vanilla Pudding

I made this as a quick simple dessert for a cold night. My family enjoys warm pudding and I had these ingredients on hand. However, if I had made it per the instructions it would have been sweet warm milk, not pudding. Being that have made pudding before I watched and added 3 whole beaten eggs very very slowly and cooked until thick. I will also say that I made a batch for 6 vs 4 so if I were making a smaller pot I would use 2 eggs. I also used regular sugar for the honey and drizzled a bit on top after pouring into bowls. It was a hit, even my picky eater said it was really great. I will make again but will recommend using eggs and a wire whisk to any who take this recipe on.

Homemade Maple Syrup

My kids are on the Feingold diet, which eliminates anything artificial (flavors, colors, preservatives) and the high grade maple syrup is very expensive for a household of 6. We have been using a recipe just like this for the past year minus the maple flavor. We buy 1 bottle of the high priced, good stuff and will add just a tablespoon to this recipe just before bottling. My whole family prefers it now to the chemical tasting, artificially flavored, commercially prepared stuff. Who doesnt like warm, homemade syrup on top of made from scratch pancakes with eggs that your hens laid and a glass of raw milk from your local dairy farmer? Nobosy, that's who! We all want our food as close to nature as possible. Do yourself a favor and give this recipe a shot, you won't regret it.

Flourless dark chocolate cake with almonds

I should have taken a picture! We tried a flourless cake at a fancy restaurant so naturally I had to try my hand at it. Its dense and cold and dark and rich. Just like chocolate cake should be, but without the carbs of flour. Great with a small scoop or vanilla ice cream.

Chicken Enchilada Casserole II

Made this many times. Have finally gotten smart and make double and freeze a casserole to eat later. It took me awhile to find a cream of chicken soup that didnt have artificial flavors or preservatives (for my sensitive kids) but the effort was worth it as this is a favorite recipe around our house.

Avocado, Tomato and Mango Salsa

No Tomato Pasta Sauce

It's sweet and a nice change of pace. We were checking our family for salicalyte sp?) intollerances and needed a tomato free spaghetti sauce. Its a bold pink color and ppl watching you reheat and eat your leftovers are gonna give you funny looks but I truthfully didnt mind it. I could go either way, traditional or beet sauce. We call it 'Beetsghetti' at our house and even the kids like it. Great way to sneak in new flavours in a familiar way.

Janet's Rich Banana Bread

This is the only recipe I will ever use! The sour cream really makes this stellar. The nuts and the perfect golden crust... The moist texture with the heavenly scent.... Its hard on the calories but just too good to resist. Keeper!!
