Mashed Potato, Rutabaga, and Parsnip Casserole with Caramelized Onions

This was soooo good! Everyone from the 2 year old to Grandpa loved it. I had planned to cook potatoes, rutabagas and parsnips as side dishes with a roast beef & yorkshire pudding. This is a great dish to combine them in, likely took less time than cooking all 3 and less pots & pans. Will definetly be making this again!

Dumplings

Uhm, I kind of ate at least half of the dumplings before my husband got home from work, I think I have time to make some more. THEY ARE THAT GOOD!

Butternut Squash Soup II

This is probably one of the best and easiest soups I have every made. It may just replace my pumpkin curry soup recipe as my favourite. Only adjustment I made was, I had 4 chopped sage leaves. Yummy!!!! Made this a second time and replaced the butternut with a hubbard squash, delicious.

Irish Egg Rolls

These were the favourite appetizer at out St. Patrick's Feast. I used the Guinness Glazed brisket recipe, for the corned beef, and chopped that up for the egg rolls. Was a little unsure of the sour cream/horseradish.dijon mixture, but it was fantastic as well!

Sky High Yorkshire Pudding

Best Pud recipe I have tried yet! So High, held lots of gravy. Highly recommend a cookie sheet or foil on the rack below or you will be cleaning your oven.

Guinness® Corned Beef

This was the best brisket I have ever made!! I am now inspired to cook even more with Guinness. I sliced the brisket ahead of time, and then poured another can of Guinness in the warming dish to keep the meat warm.
