Loved this. I didn't have any potatoes but I did have a butternut squash. So I pealed and qubed it. Threw it in instead of the potatoes. FANTASTIC!!! I also added cumin. What a great dish. We will make this again!!

Portofino Lamb and Artichoke Risotto

Reviewed: May 10, 2011
I saw this recipe and knew I wanted to make it. When I went to the cabinet I had everything but the Arborio Rice. So I substituted Qunioa (red). I thought since someone said the red color from the wine was not appealing the red Qunioa would be normal. I can't wait to make this with the Arborio Rice because it was to die for with the Qunioa! Loved the red wine, I don't think I would want to use white wine as some suggested. Great flavor. My husband loved it and even took the left overs to work today!

Incredible! Used red quinoa. Looks much more appetizing than the picture. Didn't have the pine nuts but it was still awesome!!!! You will be glad you tried this recipe!

This is awsome and so ease! We eat gluten free so I used amaranth cookies and pecans crushed for the base. I topped it with crushed Andies peppermint candies. So cute. This is a huge hit!!!

Quinoa Salad with Dried Fruit and Nuts

Reviewed: Aug. 7, 2008
This was awsome! great on it's own or served with salmon. I was a little afraid to put the vinigar in so I only used a teaspoon. You could barely taste it. My family also loves spice so a added a teaspoon of chyanne pepper. Wow! This is a keeper. The spicy and sweet really was a great flavor blend. Next time I may add some dried cherries for more tart and spice.

Butternut Squash Bisque

Great texture and flavor. I did take a few others ideas of adding curry and cyanne pepper along with the nutmeg! Wonderful and spicy. I agree there is a lot of chopping/roasting. The next time I make it I think I will try winter squash from the frozen food section.

Anna's Amazing Goulash

Reviewed: Nov. 20, 2005
I fixed this recipe on a weekend my son brought home 3 of his team mates from his college football team. Believe me it was barely enough, Ha! Ha!. Glad I found this recipe. The boys loved it. There was just enough left over for each of them to take a small container home. Next time I fix it I will reduce the amount of red vinager. It was a little overpowering for me. Instead of peas I used fresh mushrooms. My family doesnt eat peas. Definately will make again.

Tiramisu II

This is awsome. And EASY! I have celiac disease so I substituted Gluten Free Lady fingers and I could not tell the difference! I did over whip the cream. I will know for the next time. Also, I like a little more Rum. But it would be perfect for my teenage daughter to share with us just like it is. Thanks Christine.

I added a little cheddar cheese along with the processed food cheese for a little more flavor. A big hit. The kids loved it and it makes a good pot luck dish.
