Cheesy Pork Chops with Spicy Apples

YUm. My husband was in charge of dinner. He typed in 5 ingredients we had on hand and this was the recipe that caught his tastebuds. Instead of porkchops , he sliced up a pork tendlerloin we had in the freezer. Cooked in our grillpan and put everything in a piece of stoneware to melt the cheese on top. Definitely will make this again.

Overnight Raisin Oatmeal Pancakes

My kids LOVED these pancakes. I'm not a pancake person, but I really liked these. As suggested I doubled the cinnamon and added some vanilla. To make them really special I carmelized some sliced bananas, put them between two pancakes, drizzeled with caramel syrup and topped with a little whipcream. Definitely a keeper.

This is my first attempt at making quiche. I added chopped brocolli and red peppers for color. It was wonderful, my 5 year old even liked it. I made it for a food swap, so I had to make 12 of them all at once. Finished all 12 in less than 2 hours. Great meal to pull out of the freezer and put in a toaster oven.

Grandma Johnson's Scones

My first attempt with scones was so-so. I decided to try this recipe and I'm so glad. They were wonderful. I made Orange Choc chip since they were for a kid's book club. Added fresh orange zest and about tblsp juice to sour cream mixture. Then topped with an orange glaze. Mixed my egg with the sour cream just before adding to the dry ingredients. Picked up some great tips by watching the Chef John Scone video. Add your fruit/Choc chips to the flour mixture to keep from over working the dough, Split my dough into two rounds. Loved the tip to use saran wrap to knead and form dough. Saves on the mess

Chicken Tortilla Soup I

My whole family LOVES this recipe. I add about 1/2 cup finely crushed tortilla chips and squeesed in some lime juice. I'm not a big fan of hominy, so I substituted white corn. I cook my chicken all day in the slow cooker and used the broth instead of canned broth and water. I do end up using more broth to thin it out a little. This soup freezes great. I double the batch and freeze several bags to pull out on our busy nights.

Garlic Cheddar Chicken

This was so yummy. I have a very picky little 7 yo that asked for seconds. Four out of four thumbs up in our family. Will definitely be making this again.
