Chocolate Banana Bread

I have probably made this every week for 2 months, I just love it! I've made a few alterations: I've added up to 8 bananas...just whatever I have on hand. I use dark chocolate chips, instead of semi-sweet, and put a little over half the bag in, so maybe more like 1.5 cups. I also add in a cup or so of chopped pecans. I used the Splenda sugar blend the last time I made it and it turned out WAY too sweet. I would maybe even cut the amount of that in half. I find that the baking time is really much longer. Probably closer to 1 hr 20 minutes, even in a convection oven.

Carrot Soup 'a la Louise'

I've made this a few times, and my tongue is watering thinking about it! It tastes a lot like butternut squash soup. I pureed the carrots and onions after they were cooked. I made it again with a boxed white wine flavored chicken stock and it turned out great too. I prefer it to be a little thicker, and more like carrots instead of chicken, so I reduced the amount of stock to 4 cups (one box). It was about the consistency of runny mashed potatoes. I ate the whole pot myself in a day. FABULOUS!

Elegant Orzo with Wilted Spinach and Pine Nuts

I love orzo pasta and I was eager to try this. It was just OK. I only used 1/3 cup of oil, but it was still too much for my liking. Other reviewers are correct...it was bland. Next time, I will add onions, maybe green peppers, and more balsamic vinegar.

Cashew Crusted Chicken

The sauce was very good (tastes a lot like sweet & sour sauce), but I couldn't get the cashews to stay on! The apricot preserves are pretty expensive too (you need 2 jars). I will probably make this again, but only as a dipping sauce.

Chicken and Broccoli Braid

It's yummy and very pretty, but very fattening! I substituted light cream cheese for some of the mayo. You can put virtually anything in it that you like. I made one with spinach and portobello mushrooms that turned out well.

Pear and Gorgonzola Cheese Pizza

It was good. I used cream cheese instead of provolone, so it was a bit dry. Maybe next time I will add some kind of preserves to the cream cheese.

Cream Cheese Patties

These are fantastic! I was a vegetarian for 10+ years, when I ran across these. They have a very meaty consistancy. My husband (non-vegetarian) loves them too! The only downside is that they are somewhat expensive to make, and takes a little extra time. Needless to say, it is well worth it! Goes very well with corn on the side.
