Chocolate Bourbon Pecan Pie

I have made this many times and everyone loves it. I also had the problem of too much filling, even with a deep-dish crust. What I have started doing, and it comes out perfectly, is using 2 regular (not deep dish) pie crusts. I keep the ingredients the same except I double the pecans and chocolate chips and split the filling between the two crusts. I line the bottom of the pan with the chips; if you want to mix them in with the filling, don't double them. The pie is good either way but is more like a custard or chess pie when the chips are mixed in and more of a traditional pecan pie when you don't. I just prefer not mixing them in.

Mushroom Pork Chops

This was delicious and easy. I simmered the pork chops for close to an hour, and they were very tender. I will definitely make this recipe again.

Tiramisu Cheesecake

I made this cheesecake for a Christmas dinner and it was a huge hit. I doubled the liquer in both the crust and the filling, and used tiramisu-flavored mascarpone. Once I figured out how to process the ladyfingers into crumbs (a blender with a "crumb" option works great), it was a very easy recipe.

Orange Rice

This was very tasty and easy to make. I did not have any orange zest so I left it out, but it still tasted great! It took a little longer than 5 minutes for the liquid to absorb and the rice to finish cooking, but I just left it on a few extra minutes and it was fine. Thanks!

Chocolate Chocolate Chip Cookies I

These cookies turned out great. I left out the nuts and instead of chocolate chips, I used raspberry chips (can be found during the holiday season at some grocery stores). They were a big hit when I brought them to work!

Raspberry and Almond Shortbread Thumbprints

This recipe turned out great but the only problem was being able to roll the dough into balls-it seemed to crumble when I tried. I added just a little bit of water and it helped.
