Easy Chicken Posole

very tastey!! For an even faster weeknight meal I used a store bought rotisserie chicken and just shredded it. Shhredded cabbage, lime wedges, radish, and tortilla strips for garnish are a must with this traditional soup. Very very good!!

Zesty Porcupine Meatballs

This was uber deeelish... in my meatballs I used rice leftover from the night before about 1.5 cups and 2 TBS of breadcrumbs to make my meatballs hold a bit better. I baked then in the oven at 350 for about 30 minutes while I prepped the sauce. I served over a sort of garlic infused fried rice I whipped up (again using the leftover rice) very quick & very tasty!!

Minnesota Golf Course Chili

I love this Chili... it's a mildly spicy chili with a bit of a sweet taste as well!! I added a package of chili spices which had a chili pepper/salt/cumin mix in it for a bit more flavor. I also used 2 LB's of ground beef, added a few glugs of Worchestire sauce, used pinto beans because I loathe the kidney bean (LOL) and used brown sugar instead of white. Served with cornbread muffins and shredded cheddar cheese. A great recipe everyone enjoyed!!

Drop Biscuits and Gravy

So very tasty and quick!! I used a bit less sausage as well for a more creamy gravy it was totally awesome!! Good for a large family breakfast or even for camping. Layer with your favorite eggs and a few dashes of Tabasco and you've got a good ol' diner breakfast in your jammies!!
