Chicken Makhani (Indian Butter Chicken)

We really enjoyed this dish. I was missing a number of ingredients and had to make several substitutions: I used coconut milk instead of half and half, sour cream instead of yogurt, 1 ts peanut butter because I had no peanut oil, and about 3/4 a can of tom. paste with 1-2 cups of water instead of tom. puree. I also put the onion, ginger, and garlic all in the food processor and tripled the spices. Surprisingly, with all those substitutions it was still delicious. I'm excited to try it as the recipe details next time!

Spiced Mixed Nuts

I'd say this is good, very easy. I made the first batch exactly as the recipe said but wanted a crumblier coating (as apposed to the glossy coating) so second time around I added about a TB of butter to the coating and sprinkled an extra TB or two of brown sugar directly onto the nuts before mixing them into the microwaved part. The texture was what I'd wanted. I couldn't taste any cayenne...would put more of it in next time.

Thai Peanut Chicken

Quite good. I agree that doubling the sauce is best. My husband and I like it spicy so we put in triple the cayenne as well as black pepper and will use more next time. I'd also go a little heavier on the ginger. I added julienned carrots and sliced mushrooms and had it over lettuce and cucumber as a salad but will try it with rice next.

Cheesy Pasta Alfredo with Salmon

Very good! I like to use salmon frequently in our diet and am always looking for new ways to serve it! I used this recipe with the "Lighter Fettuccini Alfredo" sauce on this website and really really enjoyed it! The garlic, onion, lemon, and spices went really well together! (the alfredo can use twice as much seasoning as listed)
