Easy Pumpkin Muffins

I absolutely loved these. They were delicious and incredibly moist. I probably used about twice the spices, because I like a stronger taste. These weren't pretty, but they were absolutely amazing. I'll keep the ingredients on hand for this one!

Wheat Crackers

It's a good simple recipe, but it tastes like it too. I think I might try some suggestions of others. Also, I need to buy a real rolling pin, I had to do this with a can of cooking spray...it worked, but I think I would have been less aggravated and my crackers may have been thinner if I had a proper rolling pin.

Thai Pineapple Chicken Curry

This was amazing! I managed to mess up my rice (hand me down rice maker with no instruction booklet...), but still enjoyed a bowl of just plain curry...I think that speaks volumes for how good this is! Leftovers were great too. I ignored proportions on chicken and veggies and just added as much as I wanted for my tastes. I will definitely be making this again.

Twice Baked Sweet Potatoes

I definitely didn't succeed at stuffing the skins, they were too soft, but I made a nice sweet potato casserole on a bed of potato skins... I added a little extra spice to it--some cinnamon, nutmeg, a touch of cayenne (it was really great with just that hint of a bite to it). I also used about 1/2 the vanilla called for, and it was still a really strong flavor--but I use high quality real vanilla extract, not imitation, so that's not incredibly surprising. The texture of this is fantastic--the cream cheese really makes it.

Festive Shortbread

Very good, simple recipe. Worked great. I actually completely melted the butter (I almost always do that for the sake of thorough mixing, though it doesn't always come out right). Also ran out of flour, so had to use an extra 1/2 cup of sugar and reduce flour by about 1/2 cup. Sprinkled with powdered sugar fresh out of the oven so sugar would melt slightly. Made a delicious fresh cookie, and still tastes good the next day when stored in tin foil with a loose seal (they were still warm and I wanted to go to bed).

Paprika Onion Bread

It was just a touch bland for my tastes, but my guests adored it, and it paired well with the slow cooker chicken taco soup I made. Next time, I might add more paprika, or perhaps add some chili powder. LOVED the texture though!

Baked Tortilla Chips

The times in the recipe didn't work for me. My first batch burned because I trusted the timer. All other batches were wonderful though--I think I baked them for a total of around 10-12 minutes per batch, but I'm not positive. I also used lemon juice rather than lime (time crunch and I had a bottle of lemon juice, much easier than juicing the lime). They were absolutely delicious! Next time though, instead of trying to serve them fresh, I'll make them ahead of time and put them in the oven for a few minutes to warm them up.

Slow Cooker Chicken Taco Soup

Absolutely delicious! I paired this with Paprika Onion bread. My company loved it! We used a porter for the beer, and the taste it added was definitely amazing. I didn't add cheese for garnish, and it was agreed that cheese would have made the meal--but it was still amazing!

Guacamole

Very good! A spur-of-the-moment inspiration led me to add little honey (especially since I was making slightly spicy chips to go with it), and it definitely improved the guac to have the hint of sweetness. I had this, a storebought bottle of salsa, and a tub of storebought sour cream with homemade chips when I had some friends over for dinner. The salsa was untouched, and I got constant comments that the sour cream and guac went very well together. A definite success!

Chocolate Kiss Cookies

Delicious! Not as gooey as I expected though. I found it much much easier to melt the butter completely and wrap the warm dough around the kisses. It was too stiff when cold. Maybe margarine would have behaved differently though. I also ended up using a full 12 oz bag of kisses. I'll make a habit of keeping a good supply of these on hand in the fridge. They're wonderful! They make a delicious warm dessert, or snack, and they're also tasty the next day!

Mall Pretzels

AMAZING recipe! I made them in a few shapes, and as per my favorite pretzel place, I made them with a few different toppings...garlic powder and salt with ranch to dip it in is possibly my favorite. :) I threw about six into the freezer in zip locs, hopefully they'll hold up and reheat well. I plan to oven reheat them as another person suggested. Be prepared for your hands to get a little sore when you roll it out...but otherwise, it's easy! I made mine in a bread machine. Just threw in the dough ingredients and set it. The only thing I might suggest is using a damp cloth to cover the dough while you're rolling...the outside of the dough began to dry before I got the chance to go back and roll them more, so all of my pretzels had a slightly odd-looking texture from the dried dough being rolled further. It didn't seem to affect the taste, nor the texture in my mouth, so it turned out just fine.

Stuffed Potatoes

I'm not sure where I messed up, but when I scooped out the flesh, I ended up with potato scoops that were really hard to mash up, so I ended up sort of making a scalloped potato in potato skins. It did taste delicious though. I added some ranch and some extra spices (like paprika). It tasted good, but it wasn't a soft stuffed potato like I'd wanted.

Uncooked Banana Pudding

Karjalan Pies

Mine weren't pretty, and due to the grocery store being out of rye flour and me being impatient, I used plain white flour. But it tastes great! I put a slice of cheese over a few when I took them out of the oven and my boyfriend and I ate them with the melted cheese. Absolutely amazing. I can't think of a better breakfast food or heavy snack. Will have to determine the best way to reheat. I hope nuking will work, but I think oven will be the only way to get the right texture.
