Broccoli Cheese Layer Bake

Reviewed: Feb. 4, 2001
Wow! Who would think something so quick and easy to put together would taste so good!! Had my daughter and son-in-law for dinner and served an entree that took hours to make and all they did was rave about this broccoli casserole! My daughter, who doesn't cook much, asked for the recipe. This is definately a keeper for regular meals as well as Holiday dinners. Thanks, Lynnmarie!!

Kielbasa and Veggies

Reviewed: Jan. 28, 2001
Very tasty! Since my husband and I both have to watch our cholesteral, I used a low fat smoked sausage, and cut the butter to 3 TBS and uesd low fat cheddar and it was still a wonderful combination. Will definately add to my recipe collection and make again. Thanks, Cat!

Sausage-Potato Casserole

Reviewed: Jan. 3, 2001
This was a good casserole. My husband even liked it! Because we have to watch our cholestoral, I used turkey sausage and low fat cheese along with soy milk, and it still came out tasty. I didn't bother with the foil - just sprayed the casserole dish - and had no problems with sticking or cleanup. Will make again.

Heavenly Pink Salad

Reviewed: Dec. 29, 2000
This was a great fruit salad! I had my in-laws for Christmas dinner and chose this salad as I had the ingredients on hand. Everyone thought it was wonderful. It was quick, easy and very tasty. Next time I will half the recipe as it made a lot! Definately a keeper!

Ground Beef Shepherd's Pie

Reviewed: Dec. 21, 2000
After reading other comments, I made sure to add seasonings... salt, pepper, and a bit of cayenne pepper along with a splash of red wine. I also used mushrooms, corn and peas, since we like those veggies in casseroles. I doubled the mashed potatoes and sprinkled paprika on top, along with the cheese. My husband gave it a thumbs up and asked if he could take leftovers for lunch to work the next day. Great recipe!

Apple Pie by Grandma Ople

Reviewed: Dec. 14, 2000
I don't make many pies, and when asked to bring an apple pie for Thanksgiving, I thought I would try this recipe. Not only was it easy, it looked like I'd been making pies for years and tasted great, too! I used Pillsbury crusts which helped cut down on time. I will definately be making this again!!

Yam and Apple Casserole

Reviewed: Dec. 14, 2000
This was a great change from the usual sticky sweet yam casseroles. The blend of apples and yams was just right. Had many, many compliments on it from all 17 at Thanksgiving dinner. Thanks, Lynn!

Scalloped Corn and Broccoli

This was a wonderful veggie casserole that I made for Thanksgiving this year and it was very quick and easy and had a great blend of flavors. I doubled the recipe as we served 17 people. Everyone raved about it, adults, kids and teenagers alike! Definitately a "must make again"!

Jacob's Coat Casserole

Reviewed: Dec. 14, 2000
This was a good basic recipe, although I omitted canned green beans and carrots. Instead, I added one chopped green pepper and sauteed with the ground beef and onion, and also used creamed corn instead of whole kernel corn. I also subtituted 1 cup grated cheddar cheese for the 1/2 lb. processed cheese and prepared 2 cups of instant mashed potatoes instead of 4. Was very quick and easy and my husband really liked it. Thanks, Cindy!

Ground Beef Mexican Style

Reviewed: Dec. 14, 2000
My husband and I thought this a bit bland. I doubled the sour cream and added 1/2 cup more salsa with cilantro, as well as chili powder. I also tossed in a can of drained niblet corn and mixed in the cheese. I added the green peppers and onions right after cooking the meat as they needed longer to cook as well as for the flavors to be absorbed. Definately a quick and easy recipe. Will make again on a busy day!
