Cranberry Waldorf

I made this for Thanksgiving and absolutely LOVED it as did the rest of my family. I plan on making it again for Christmas. Besides being delicious,it's a very attractive dish.

Slow Cooker Chicken and Dumplings

This was SO good. My husband was in heaven! They really reminded me of my grandmother's dumplings - but without all the work! They were even better re-heated the 2nd day.

Kiki's Borracho (Drunken) Beans

I am making these today (Memorial Day) for probably the 4th time. I absolutely LOVE these beans. After soaking the beans overnight, I throw everything into the crockpot and wait for the house to fill with that wonderful aroma. They are a nice change from the sweet baked beans that I often make with BBQ. They go great with every kind of meat - today they'll be accompanying my grilled baby back ribs. YUM! Thanks for such a great recipe Kiki!

Garlic and Tomato Tilapia

I made this last night and it was FABULOUS! I took advice from some of the other people and added some fresh basil and parmesan cheese. We have an abundance of tomatoes from our garden and this was a great way to use them. I doubled the sauce and served the fish and sauce over some whole wheat pasta. YUM!

I've had this huge zucchini from our garden just waiting to be used. I tried this last night and it was SO good. I added a little extra garlic, about 1/4 C. parmesan and a few red pepper flakes. I will definitely make this again!

Roasted Brussels Sprouts

I am an avid crockpot user - I have 3 of them in various sizes. I made this recipe for the first time last night (using a pork loin roast) and it is one of the best recipes I've ever made in the slow cooker. I followed the recipe exactly - the gravy was amazing. I served it with mashed potatoes and a green salad. It's even "company worthy"! It will definitely go to the top od my 'favorites' list.

Onion Roasted Sweet Potatoes

I had a couple of sweet potatoes in my pantry that I needed to use. I was looking for a "not so sweet" way to cook them. This was really good - we just kept picking at the pan like it was popcorn! I cut back on the onion soup mix somewhat as we are trying to cut back on the salt. I will definitely make this again.

Garlic Pork Roast

We had this for dinner tonight and it was FABULOUS!! I only had 1 sweet potato so I used a baking potato as well. I put the onion, some garlic cloves and some baby carrots on the bottom, put the roast on top of that. Surrounded the roast with the mixture of potatoes. I also cut some slits in the roast and put several garlic cloves in (we love garlic). Noy did the house smell good!! The roast was so tender. I will definitely make it again and be sure to have more sweet potatoes next time.

Slayer's Sweet, Tangy, and Spicy Kabobs

I absolutely LOVED this. I did not use the cherries or cherry juice, that was my only change. I marinated the chicken for 24 hours, then brushed the marinade on the k-bobs several times while I was grilling. Definitely a keeper!!!!

Awesome Slow Cooker Pot Roast

I've been making this for many years and it is SOOO good. Instead of water I use 1 can of cola (can use diet). It makes for the mos tender meat and fantastic gravy!!! I put baby carrots, onions and potato chunks in the pot as well. YUMMMMMMMMM.
