The Best Meatballs

Reviewed: Jan. 1, 2014
Best recipe!!! Have made these many times. They are my go to recipe....so easy and produces an amazing meatball. Followed recipe, just didnt fry them. Why stand over a stove frying when you can bake them 375 degrees for 20 min, then add to your sauce pot or freeze for future use. Fantastic recipe!!

Pretzel Dogs

Reviewed: Jan. 1, 2014
This was very easy and tastey!! I halved the recipe and still came out with 8 dogs wrapped and 8 stand alone pretzels. I should have brushed an eggwash on them before baking as the required 20 min baking time wasn't enough to get them golden brown. I ended up baking them for 10 min more. Then brushed melted butter on them and added coarse kosher salt. Excellent and quick! My family loved them. Will definitely make them again!!!

Chicken Noodle Casserole I

Reviewed: Dec. 17, 2013
this is a fantastic recipe!! substituted low-fat and non fat versions of the condensed soups and sour cream. with evening baked together, you cannot tell the difference. I also added frozen press and carrots for nutrition and color. omitted the butter on top and just added the crackers. you can't tell the difference. have also used this recipe for leftover frozen turkey from Thanksgiving!!! great versatile recipe for any weeknight meal!! my family loves it!!

French Toast Casserole

Reviewed: Jan. 3, 2013
This recipe couldn't be simpler!! This was a wonderful casserole to share with family on Xmas morning!. Prepared it the night before, as directed, except added a little more cinnamon to the egg/milk batter. Also used a 13x9x2 pan. I think letting it sit overnight in the fridge really helps the bread soak up all the wet mixture, so you don't end up with a soggy mess. Next time, I will use the cinnamon raisin bread for a twist, and maybe even try the carmelized apples, nuts and brown sugar topping a few reviews suggested. Great casserole to prepare the night before, pop into the oven that morning and be able to enjoy your family and company :) If you want a terrific meat/cheese accompanyment for an over the top breakfast try the Hashbrown and Egg Casserole recipe here - my family went nuts with both these casseroles xmas morning!!

Warm Dijon Potato Salad

Reviewed: Apr. 15, 2012
This was a simple, easy, tasty potato salad. I'm usually not one for mayo based salads, but this one had such flavor it'll be a new go-to salad! I listened to other recommendatons, increased the amount of mayo and added sourcream as well. You can truly add and/or switch things around and you'll always come up with a delicious version!

Ragu Bolognese

Reviewed: Dec. 11, 2011
This is the BEST bolognese I have ever had! I added 1 cup red wine after the meat was cooked and let that reduce. Then followed the recipe, with the addition of a whole 28oz can of crushed tomatoes, rather than the 2 cups called for. Let it simmer away on the stove. Served it over bow tie pasta with some garlic bread. The family LOVED it! Next time, I will try this in the slow cooker, so I don't have to be around 2 1/2 hrs to stir it. YUMMMMMMMMMM... you will not be disappointed! (P.S. as with any recipe make sure you taste and season accordingly to your family's preferences)

Broccoli Cheese Soup

Reviewed: Nov. 12, 2011
This soup is AMAZING!!! Instead of garlic powder, I minced up 2 garlic cloves and added to the sauteed onions. Didn't have any cornstarch, so instead I chopped up a medium russet potato, added that to the sauteed onion and garlic along with the chicken stock and cooked for 10 min. Then added the frozen broccoli (used 1 1/2 bags of frozen florets). Also didn't have processed cheese, so used 1 lb of sharp cheddar. Basically, this soup recipe is very forgiving! The flavors were amazing. And my family loved it! This is our go-to recipe for the winter months!!

Corn Chowder

Reviewed: Jul. 17, 2011
Just made this chowder today - FABULOUS!! Followed the recipe exactly except for a few modifications: added 3 whole cloves of garlic along with the sauteed chopped onions, used same amt of evaporated skim milk in place of regular milk (as that's what I had on hand), had fresh corn on the cob from a family BBQ the day before and at the end, used an immersion blender in the soup pot to mix all the ingredients together. The soup came out thick and creamy due to the potatoes being mashed together. In the past have used this same concept but also poured some of the soup into a blender in batches and returned the soup back to the pot to get it nice and creamy. Either way works!! Try this very simple yet extremely delicious chowder - it is definitely going into my recipe collection and to be made quite often!!

Linguine with Clam Sauce

Reviewed: May 15, 2011
Just made this dish for dinner tonight, had everything on hand in the house. What an amazing, easy last minute kind of meal! I used whole wheat spaghetti, and for 1 lb of pasta, next time I would definitely increase the amount of garlic, as well as increase to 3 cans chopped clams. I also used fresh parsley and basil, which is what I have growing in my garden. A definite repeat keeper!!

Mall Pretzels

Reviewed: Apr. 23, 2011
After reading ALL the reviewes going back to 2009, I decided to take the suggestion of others and boil these pretzels in water and baking soda for 30 seconds before baking. I have to say, I am very sorry I did. When I had formed them into pretzels, and allowed them to rise, they puffed up nicely. Should have just given them an egg wash and sprinkled with them with kosher salt, and baked them. After having boiled them, salted them and baked them, they came out chewey and flat, not fluffy as I had expected. Will make this recipe again, this time omit the boiling part and see how they come out. How disappointing!!!

Meatball Nirvana

Reviewed: Apr. 12, 2011
Just made these meatballs for dinner, and WOW they were so flavorful. I didn't have worcestershire sauce, so I used A-1 steak sauce instead....yumm. Also, next time I make these I will definitely mince the onions a bit finer or maybe grate them with a hand grater, as I didn't care for the larger sizes I had left the pieces in. Other than that, this is a fantastic recipe that I will definitely make over and over again and try with turkey and pork as well!!

Mouth-Watering Stuffed Mushrooms

Reviewed: Jan. 2, 2011
These mushrooms are amazing! Just made some minor changes, as I don't like wet stuffings for my mushrooms, so I added a bit more cheese and a little panko bread crumbs as well to the mixture. I also ended up using the mixture for a total of 30 mushrooms and it was the perfect ratio. I dipped the mushrooms with filling into panko breadcrumbs and drizzled melted butter as one other viewer had suggested. AMAZING!!! This will definitely be on our future appetizer list!!

Cranberry Pistachio Biscotti

Reviewed: Dec. 31, 2010
Just tried this recipe this morning. Didn't have all the ingredients, so I tried substituting. Did not add almond extract or pistachio nuts as I did not have any. Added orange zest to the recipe, along with 1 cup choc chips in place of the pistachios. Was very nervous as this was my first time making biscotti, but the experience was incredible! I didn't have light olive oil, so I used vegetable oil instead, and added a few drops to the sheet pan so the logs wouldn't stick. This came out really handy as my hands were wet with oil, which made forming the logs a breeze! I got 24 cookies out of the recipe. Will definitely keep this recipe and try other variations in the future!!

Ultimate Twice Baked Potatoes

Reviewed: Apr. 19, 2008
Now I know why this recipe was called the "ultimate". It tastes like a fully loaded baked potato that you could get in a restaurant. I mixed extra cheddar cheese in with the potato mixture and added some sauteed onions. This was amazing!!!!!!!!!!!!

Slow Cooker Turkey Breast

Reviewed: Mar. 6, 2008
I was a little skeptical at first about this recipe, and decided to give it a try based on many of the suggested alterations from the reviews. I added chopped onion, garlic, celery, chicken broth and italian seasonings to the pot along with the onion soup mix and some water. I have to say this was absolutely the BEST turkey breast I have ever had, and I normally don't like turkey because of it's dryness. My family adored this meal and I have vowed due to the ease of this recipe, I will be making this more often! Try it... you won't be disappointed!!!

Hot Artichoke and Spinach Dip II

Reviewed: Jan. 25, 2007
This recipe is amazing! Very similar to the dips you find in restaurants. I only added a little bit of milk right before baking and it came out extremely creamy and luscious!! Would definitely recommend this recipe to anyone in love with artichokes and spinach!!
